Skip the gravy and serve with Winter Fruit Compote for a festive flavor.<br \/>\nPrep: 10 Cook: 60<\/p>\n<p><strong>For the turkey:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">TBS olive oil, divided<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS minced garlic<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp paprika<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp poultry seasoning<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp kosher salt<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp ground black pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">(6- to 7-lb) bone-in skin-on turkey breast<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">small yellow onion, quartered<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups chicken broth<\/span><\/li>\n<li><span class=\"id-ingredient-name\">fresh sage leaves and rosemary sprigs, optional<\/span><\/li>\n<\/ul>\n<p>Stir together 2 TBS <strong>oil, garlic, paprika, poultry seasoning, salt,<\/strong> and <strong>pepper<\/strong> in a small bowl until a paste forms.<\/p>\n<p>Loosen skin from <strong>turkey<\/strong> gently, keeping skin intact. Rub <strong>oil mixture<\/strong> under skin. Brush <strong>skin<\/strong> with the remaining 1 TBS <strong>oil.<\/strong> Stuff <strong>turkey cavity<\/strong> with <strong>onion.<\/strong><\/p>\n<p>Place Instant Pot rack in pot. Add broth to pot. Place turkey on rack, breast side up. Seal Instant Pot and set to <strong>MANUAL HIGH<\/strong> pressure for 35 minutes. Natural release pressure.<\/p>\n<p>Preheat oven to broil.<\/p>\n<p>Remove <strong>turkey<\/strong> from pot, and place on a rimmed baking sheet. Broil until <strong>skin<\/strong> is golden and crispy, rotating pan if needed.
