Served with sides of roasted potatoes and almond-studded green beans.<br \/>\nPrep: 10 Cook: 35<\/p>\n<ul>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz Yukon gold potatoes<\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">oz green beans<\/span><\/li>\n<li><span class=\"quantity\">14<\/span><span class=\"ingredient-name\">oz sirloin steak<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS fig jam<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">shallot<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">oz sliced almonds<\/span><\/li>\n<li><span class=\"quantity\">5<\/span><span class=\"ingredient-name\">tsp balsamic vinegar<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">oz beef stock concentrate<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<li><span class=\"id-ingredient-name\">olive oil<\/span><\/li>\n<li><span class=\"id-ingredient-name\">cooking oil<\/span><\/li>\n<li><span class=\"id-ingredient-name\">butter<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nPrep: <\/strong><\/p>\n<p>Adjust racks to middle and top positions and preheat oven to 450\u00b0F. Wash and dry all <strong>produce.<\/strong><\/p>\n<p>Dice <strong>potatoes<\/strong> into \u00bd-inch pieces. Halve, peel, and mince half the <strong>shallot.<\/strong><\/p>\n<p><strong>Roast potatoes: <\/strong><\/p>\n<p>Toss <strong>potatoes<\/strong> on a baking sheet with a large drizzle of <strong>olive oil,<\/strong> season generously with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Roast on middle rack until browned and tender, 20-25 minutes (you\u2019ll start the <strong>green beans<\/strong> after 15 minutes).<\/p>\n<p><strong>Roast green beans: <\/strong><\/p>\n<p>Meanwhile, toss <strong>green beans<\/strong> on a second baking sheet with a drizzle of <strong>olive oil, salt,<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Once <strong>potatoes<\/strong> have roasted for 15 minutes, place <strong>green beans<\/strong> on top rack. Roast until tender and lightly browned, 10-12 minutes.<\/p>\n<p><strong>Toast almonds: <\/strong><\/p>\n<p>While <strong>green beans<\/strong> roast, add <strong>almonds<\/strong> to a large, dry pan over medium high heat. Toast, stirring, until lightly browned, 2- to 4-minutes.<\/p>\n<p>Turn off heat, transfer to a small bowl.<\/p>\n<p><strong>Cook steak: <\/strong><\/p>\n<p>Pat <strong>steak<\/strong> dry with paper towels. Season generously with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Heat a large drizzle of oil in pan used for <strong>almonds<\/strong> over medium-high heat. Add <strong>steak<\/strong> and cook to desired doneness, 3- to 6-minutes per side.<\/p>\n<p>Turn off heat, transfer to a cutting board. Wash out pan.<\/p>\n<p><strong>Make sauce &amp; serve: <\/strong><\/p>\n<p>Add a drizzle of <strong>oil<\/strong> and minced <strong>shallot<\/strong> to same pan over medium high heat. Cook, stirring, until softened, 1- to 2-minutes.<\/p>\n<p>Stir in \u00bc cup <strong>water, vinegar, jam,<\/strong> and <strong>stock concentrate.<\/strong> Bring to a simmer and cook until thickened, 2- to 3-minutes. Turn off heat. Stir in 1 TBS <strong>butter<\/strong> and season with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Slice <strong>steak<\/strong> against the grain.
