And on top of that, what if it was all cooked together in incredibly easy, mess-free foil packets.<\/p>\n<p>Note: Added potatoes to this to make a complete meal.<br \/>\nPrep: 15 Cook: 15 to 20<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">yellow onion<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">lb broccoli<\/span><\/li>\n<li><span class=\"quantity\">10<\/span><span class=\"ingredient-name\">oz pkg boneless, skinless chicken breast<\/span><\/li>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz potatoes<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">oz shredded fontina<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Balsamic vinegar<\/span><\/li>\n<li><span class=\"id-ingredient-name\">garlic<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<li><span class=\"id-ingredient-name\">olive oil<\/span><\/li>\n<li><span class=\"id-ingredient-name\">butter<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nPrep ingredients:<\/strong><\/p>\n<p>Preheat oven to 450\u00b0F with a rack in the center. Halve and thinly slice <strong>onion.<\/strong> Cut <strong>broccoli<\/strong> into 1-inch <strong>florets,<\/strong> if necessary. Wash and chop <strong>potatoes<\/strong> into small dice, less than \u00bd-inch cubes. (Finely chop 1 tsp garlic.<\/p>\n<p><strong>Caramelize onions:<\/strong><\/p>\n<p>Heat 1 TBS each of <strong>butter<\/strong> and oil in a medium skillet over medium-high. Add <strong>onions<\/strong> and cook, stirring, until very soft, 3\u20134 minutes. Season with a pinch each of <strong>salt<\/strong> and <strong>pepper.<\/strong> Stir in chopped <strong>garlic<\/strong> and \u00bc cup <strong>water.<\/strong> Cook, stirring occasionally, until liquid is reduced by half and <strong>onions<\/strong> are well browned and jammy, 1\u20132 minutes more. Stir in \u00bc tsp <strong>vinegar.<\/strong><\/p>\n<p><strong>Cut foil &amp; prep chicken:<\/strong><\/p>\n<p>While <strong>onions<\/strong> cook, cut 2 pieces of foil into 12&#215;20-inch rectangles. Pat <strong>chicken<\/strong> dry and season all over with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p><strong>Assemble foil packets:<\/strong><\/p>\n<p>Place <strong>chicken<\/strong> on foil and <strong>broccoli<\/strong> and <strong>potatoes<\/strong> next to each other beside the chicken. Drizzle <strong>broccoli<\/strong> and <strong>potatoes<\/strong> with <strong>oil<\/strong> and season with <strong>salt<\/strong> and <strong>pepper.<\/strong> Spread <strong>caramelized onions<\/strong> over <strong>chicken,<\/strong> then sprinkle with <strong>cheese.<\/strong> Fold sides of foil over top and pinch edges to seal (leave room inside packets for air to circulate). Transfer to a rimmed baking sheet.<\/p>\n<p><strong>Cook packets &amp; serve:<\/strong><\/p>\n<p>Roast <strong>packets<\/strong> on center oven rack until <strong>chicken<\/strong> is cooked through, about 15\u201320 minutes. Remove from oven and switch oven to broil. Carefully unwrap top of foil to expose <strong>chicken<\/strong> and <strong>broccoli.<\/strong> Broil <strong>French onion chicken,<\/strong>\u00a0<strong>broccoli<\/strong> and <strong>potatoes<\/strong> on center oven rack until <strong>cheese<\/strong> is browned, about 2\u20133 minutes (watch closely as broilers vary).
