Throw in some lean chicken, fresh ginger, and peas and you have the makings of a hearty Thai soup.<br \/>\nCook: 20<\/p>\n<ul>\n<li><span class=\"quantity\">5<\/span><span class=\"ingredient-name\">oz jasmine rice<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">1-inch piece fresh ginger<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">lb pkg chicken breast strips<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">oz <strong><span style=\"color: #ff0000;\">Thai red curry paste<\/span><\/strong><\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">oz Better Than Bouillon chicken<\/span><\/li>\n<li><span class=\"quantity\">5<\/span><span class=\"ingredient-name\">oz peas<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS AP flour<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">egg, large<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp cooking oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nCook rice:<\/strong><\/p>\n<p>Rinse <strong>rice<\/strong> in a fine-mesh sieve until <strong>water<\/strong> runs clear. Transfer to a small saucepan with 1\u00bc cups <strong>water<\/strong> and a pinch of <strong>salt<\/strong> and bring to a boil. Cover and cook over low heat until <strong>rice<\/strong> is tender, and the <strong>water<\/strong> is absorbed, 17\u201320 minutes.<\/p>\n<p><strong>Prep ingredients:<\/strong><\/p>\n<p>Peel and finely chop <strong>ginger.<\/strong> Pat the <strong>chicken<\/strong> dry, and cut it into 1-inch pieces, if necessary. Transfer <strong>chicken<\/strong> to a medium bowl and season with \u00bc tsp <strong>salt.<\/strong> Add 1 TBS <strong>flour<\/strong> to the <strong>chicken<\/strong> and toss to coat. Crack 1 large <strong>egg<\/strong> into a small bowl, season with <strong>salt,<\/strong> and beat with a fork.<\/p>\n<p><strong>Prep broth:<\/strong><\/p>\n<p>In a measuring cup, combine 2\u00bd cups <strong>water<\/strong> with all the <span class=\"ingredient-name\"><strong><span style=\"color: #ff0000;\">Thai red curry paste<\/span><\/strong><\/span> (or less, depending on heat preference) and B<strong>etter Than Boullion chicken<\/strong>.<\/p>\n<p><strong>Build soup &amp; ginger oil:<\/strong><\/p>\n<p>In a medium pot or Dutch oven, heat 1 TBS oil over high. Add <strong>chicken<\/strong> and cook, without stirring, until browned on one side, about 2 minutes, transfer to a bowl. Add <strong>ginger<\/strong> and 2 TBS <strong>oil<\/strong> and cook until well browned, for about 2 minutes. Spoon \u00bd of the <strong>ginger<\/strong> mixture into a small bowl for <strong>garnish.<\/strong> Add <strong>broth<\/strong> to pot, bring to a boil, then simmer for 2 minutes.<\/p>\n<p><strong>Finish soup &amp; serve:<\/strong><\/p>\n<p>Return <strong>chicken<\/strong> to pot and simmer until nearly cooked through, 1 minute. Add <strong>peas,<\/strong> season with <strong>salt<\/strong> and <strong>pepper.<\/strong> Add <strong>beaten egg,<\/strong> remove from heat, and let sit for 30 seconds, then gently stir once to break up slightly. Spoon \u2153 cup <strong>rice<\/strong> into each bowl and ladle <strong>soup<\/strong> on top. Drizzle with reserved <strong>ginger<\/strong>\u00a0<strong>mixture,<\/strong> serve with remaining <strong>rice<\/strong> alongside.
