It creates the perfect sauce for these seared steaks and roasted BBQ-spiced potatoes.<br \/>\nCook: 20 to 30<\/p>\n<ul>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz potatoes<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz broccoli<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">scallions<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp ranch seasoning<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp BBQ spice blend<\/span><\/li>\n<li><span class=\"quantity\">10<\/span><span class=\"ingredient-name\">oz sirloin steak<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp cooking oil<\/span><\/li>\n<li><span class=\"id-ingredient-name\">butter<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nPrep ingredients:<\/strong><\/p>\n<p>Preheat oven to 450\u00b0F with a rack in the center. Scrub <strong>potatoes,<\/strong> then cut into \u00be-inch pieces. Cut <strong>broccoli<\/strong> into <strong>florets<\/strong> and wash. Trim ends from <strong>scallions<\/strong> and thinly slice, keeping <strong>dark greens<\/strong> separate. Set aside 3 TBS <strong>butter<\/strong> to soften at room temperature until steps 4 and 5.<\/p>\n<p><strong>Roast potatoes:<\/strong><\/p>\n<p>On a rimmed baking sheet, toss <strong>potatoes<\/strong> and <strong>broccoli<\/strong> with 1 TBS <strong>oil<\/strong> and a pinch each of <strong>salt<\/strong> and <strong>pepper.<\/strong> Roast on the center oven rack until tender and golden-brown, tossing halfway through cooking time, about 30 minutes.<\/p>\n<p><strong>Cook steaks:<\/strong><\/p>\n<p>Pat <strong>steaks<\/strong> dry and season all over with <strong>salt<\/strong> and <strong>pepper.<\/strong> Heat 2 tsp <strong>oil<\/strong> in a large skillet over medium-high. Add <strong>steaks,<\/strong> cook until well browned and medium-rare, 3\u20134 minutes per side (or longer for desired doneness). Transfer to a cutting board to rest.<\/p>\n<p><strong>Make ranch butter:<\/strong><\/p>\n<p>In a small bowl, stir to combine <strong>ranch seasoning<\/strong> and 2 TBS of the softened <strong>butter.<\/strong> Season to taste with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p><strong>Finish &amp; serve:<\/strong><\/p>\n<p>Once <strong>potatoes<\/strong> are roasted, remove from oven and carefully toss <strong>potatoes<\/strong> only directly with <strong>BBQ spice blend,<\/strong> <strong>scallion whites and light greens<\/strong>, and remaining <strong>softened butter.<\/strong> Slice <strong>steak,<\/strong> if desired, then spoon or brush <strong>ranch butter<\/strong> over top. Serve seared <strong>steak<\/strong> and <strong>ranch butter<\/strong> with <strong>BBQ potatoes<\/strong> and <strong>broccoli<\/strong> alongside. Sprinkle <strong>scallion dark greens<\/strong> over top.
