Add juicy seared chicken coated in toasted shawarma spices, crisp cucumber, and a shower of crunchy almonds<br \/>\nPrep: 15 Cook: 40<\/p>\n<ul>\n<li><span class=\"quantity\">9<\/span><span class=\"ingredient-name\">oz carrots<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS <strong><span style=\"color: #ff0000;\">shawarma spice blend<\/span><\/strong><\/span><\/li>\n<li><span class=\"quantity\">5<\/span><span class=\"ingredient-name\">tsp white wine vinegar<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">oz sliced almonds<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">shallot <\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">oz kale<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS yogurt<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS mayonnaise<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">mini cucumber <\/span><\/li>\n<li><span class=\"quantity\">10<\/span><span class=\"ingredient-name\">oz chicken cutlets<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<li><span class=\"id-ingredient-name\">sugar<\/span><\/li>\n<li><span class=\"id-ingredient-name\">olive oil<\/span><\/li>\n<li><span class=\"id-ingredient-name\">cooking oil<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nStart prep &amp; roast veg: <\/strong><\/p>\n<p>Adjust rack to top position and preheat oven to 425\u00b0F. Wash and dry <strong>produce.<\/strong><\/p>\n<p>Trim, peel, and cut <strong>carrots<\/strong> on a diagonal into \u00bd-inch-thick pieces. Trim, peel, and quarter <strong>shallot<\/strong> lengthwise, mince one <strong>shallot<\/strong> quarter until you have 1 TBS (you\u2019ll use it to make the dressing in Step 5).<\/p>\n<p>Toss <strong>carrots<\/strong> and <strong>shallot<\/strong> quarters on a baking sheet with a drizzle of olive oil. Season generously with <strong>salt<\/strong> and <strong>pepper.<\/strong> Roast on top rack until browned and tender, 20-25 minutes.<\/p>\n<p><strong>Finish prep: <\/strong><\/p>\n<p>Meanwhile, remove and discard any large stems from <strong>kale,<\/strong> chop into bite-size pieces. Halve <strong>cucumber<\/strong> lengthwise, thinly slice into half-moons.<\/p>\n<p><strong>Massage kale: <\/strong><\/p>\n<p>Meanwhile, place <strong>kale<\/strong> in a large bowl, add a drizzle of <strong>oil<\/strong> and a pinch of <strong>salt.<\/strong> Using your hands, massage <strong>kale<\/strong> (like how you would knead dough) until leaves are tender, 30-60 seconds.<\/p>\n<p><strong>Toast spices &amp; cook chicken: <\/strong><\/p>\n<p>Heat a large dry pan over medium heat. Add half the <strong><span style=\"color: #ff0000;\">shawarma spice blend<\/span><\/strong> and toast, stirring, until fragrant, 30-60 seconds. Transfer to a medium bowl.<\/p>\n<p>Pat <strong>chicken<\/strong> dry with paper towels and season all over with remaining <strong><span style=\"color: #ff0000;\">shawarma spice blend<\/span><\/strong>, <strong>salt,<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Heat a drizzle of <strong>oil<\/strong> in the same pan over medium-high heat. Add <strong>chicken<\/strong> and cook until browned and cooked through, 3- to 5 minutes per side.<\/p>\n<p><strong>Tip: <\/strong>If <strong>chicken<\/strong> begins to brown too quickly, lower heat to medium and cover pan.<\/p>\n<p>Transfer to a cutting board.<\/p>\n<p><strong>Make shawarma dressing: <\/strong><\/p>\n<p>While chicken cooks, to bowl with toasted <strong><span style=\"color: #ff0000;\">shawarma spice blend<\/span><\/strong>, add minced <strong>shallot, yogurt, mayonnaise,<\/strong> half the <strong>vinegar,<\/strong> 2 TBS <strong>olive oil,<\/strong> and \u00bd tsp <strong>sugar.<\/strong><\/p>\n<p>Whisk until smooth, taste and season with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p><strong>Finish &amp; serve: <\/strong><\/p>\n<p>Slice <strong>chicken<\/strong> crosswise.<\/p>\n<p>Add <strong>roasted veggies<\/strong>, <strong>cucumber,<\/strong> \u00be of the <strong>shawarma dressing<\/strong>, and half the <strong>almonds<\/strong> to bowl with <strong>kale,<\/strong> toss to combine.
