Bring a medium pot of <strong>salted water<\/strong> to boil. Wash and dry <strong>produce.<\/strong> Trim and quarter <strong>zucchini<\/strong> lengthwise, slice crosswise into \u00bc-inch-thick pieces. Peel and finely chop <strong>garlic.<\/strong><\/p>\n<p><strong><br \/>\nSaut\u00e9 zucchini:<\/strong><br \/>\nHeat a drizzle of <strong>oil<\/strong> in a large, preferably ovenproof, pan over high heat. Add <strong>zucchini<\/strong> and season with <strong>salt<\/strong> and <strong>pepper.<\/strong> Cook, stirring, until browned and tender, 4-5 minutes. Turn off heat, remove from pan and set aside.<\/p>\n<p><strong><br \/>\nCook pasta:<\/strong><br \/>\nOnce <strong>water<\/strong> is boiling, add <strong>pasta<\/strong> to pot. Cook, stirring occasionally, until al dente, 9-11 minutes. Reserve \u00bd cup <strong>pasta cooking water<\/strong>, then drain.<\/p>\n<p><strong><br \/>\nCook sausage:<\/strong><br \/>\nMeanwhile, heat a drizzle of <strong>oil<\/strong> in pan used for <strong>zucchini<\/strong> over medium-high heat. Add <strong>sausage,<\/strong> cook, breaking up <strong>meat<\/strong> into pieces, until browned and cooked through, 4-6 minutes. Add <strong>garlic<\/strong> and <strong>Italian Seasoning,<\/strong> cook, stirring, until fragrant, 30 seconds. Stir in <strong>tomato paste<\/strong> until thoroughly coated.<\/p>\n<p><strong><br \/>\nMake sauce:<\/strong><br \/>\nSlowly stir 1 cup <strong>plain water<\/strong> into pan with <strong>sausage mixture<\/strong> until combined. Reduce heat to medium. Simmer, stirring often, until <strong>sauce<\/strong> has thickened, 3-5 minutes. Season with <strong>salt<\/strong> and <strong>pepper.<\/strong> Stir in <strong>cream cheese<\/strong> and 1 TBS <strong>butter<\/strong> until melted.<\/p>\n<p>Stir in drained <strong>pasta<\/strong> and <strong>zucchini.<\/strong> If needed, add splashes of reserved <strong>pasta cooking water<\/strong> until everything is thoroughly coated in <strong>sauce.<\/strong> Taste and season with <strong>salt<\/strong> and <strong>pepper.<\/strong> (If your pan isn\u2019t ovenproof, transfer <strong>pasta<\/strong> mixture to a baking dish now.) Evenly top with <strong>mozzarella.<\/strong> Broil until melted and lightly browned, 2-3 minutes. (Watch carefully to avoid burning. The broiler is a powerful tool!)
