You\u2019re going to love this homemade Rice a Roni recipe!<br \/>\nPrep: 5 Cook: 20<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup brown or white long-grain rice<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup broken up capellini, vermicelli or thin spaghetti <\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS extra virgin olive oil<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">small yellow onion, finely chopped<\/span><\/li>\n<li><span class=\"quantity\">3-4<\/span><span class=\"ingredient-name\">TBS chopped walnuts or pecans (optional)<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">cups chicken broth (can also use beef broth or vegetable broth)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp dried rosemary<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp dried thyme<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS chopped fresh parsley<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and pepper to taste<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nSaute:<\/strong><\/p>\n<p>Heat the <strong>oil<\/strong> and <strong>butter<\/strong> in a skillet over medium-high heat.<\/p>\n<p>Add the <strong>rice, pasta<\/strong> and <strong>nuts<\/strong> and saut\u00e9, stirring frequently, until roughly half of the <strong>rice<\/strong> and <strong>pasta<\/strong> is browned.<\/p>\n<p>Add the <strong>onion<\/strong> and cook for another two minutes.<\/p>\n<p><strong>Boil:<\/strong><br \/>\nAdd the <strong>chicken broth, salt<\/strong> and <strong>herbs<\/strong> and stir to combine.<\/p>\n<p>Bring it to a boil, reduce the heat to low, cover and cook as you would normally cook <strong>rice,<\/strong> about 15-20 minutes for <strong>white rice<\/strong> (longer if using brown rice) or until the rice is done.<\/p>\n<p>Add <strong>parsley<\/strong> and fluff with a fork.<\/p>\n<p>Serve immediately.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 4 Daring Gourmet Do you like the taste of boxed Rice-a-Roni but have been looking for an alternative with fewer chemicals?
