I couldn&#8217;t tell. Now reduced to 1 tsp. I inadvertently left out all of the tomatoes. I guess they really are optional.<\/p>\n<p><strong>Update:<\/strong> 1 tsp of cumin, used mild fire roasted tomatoes and regular diced tomatoes. Excellent!<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS olive oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">medium onion diced<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">stalks celery diced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb ground beef<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">cloves garlic minced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">quart beef stock or broth<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp cumin<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp chili powder<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp oregano, dried<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb potatoes, peeled and diced<\/span><\/li>\n<li><span class=\"quantity\">14<\/span><span class=\"ingredient-name\">oz canned diced tomatoes, with juice<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">10 oz can fire roasted tomatoes with chilies (optional)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup corn, frozen or fresh<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup green beans, frozen or fresh<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup peas, frozen or fresh<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup pearl onions<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Salt and pepper to taste<\/span><\/li>\n<\/ul>\n<p>In a 4 qt or larger soup pot, over medium heat, heat 1 TBS of <strong>olive oil<\/strong> until hot.<\/p>\n<p>Add the <strong>onion<\/strong> and <strong>celery<\/strong> and saut\u00e9 to soften, but don\u2019t brown. Add <strong>garlic<\/strong> and stir for 20 seconds. Add <strong>ground beef<\/strong> and cook until browned and mostly cooked through.<\/p>\n<p>Add 1 quart of <strong>beef stock,<\/strong> 1 tsp <strong>cumin,<\/strong> 1 tsp <strong>chili powder<\/strong> and 1 tsp <strong>oregano<\/strong> and mix in.<\/p>\n<p>Add diced <strong>potatoes<\/strong> and bring to a boil. Cook for about 10 minutes until nearly done.<\/p>\n<p>Add <strong>tomatoes, corn, green beans, pearl onions.<\/strong> Bring to a simmer and cook for 10 minutes or until potatoes are done.\u00a0 Add <strong>peas<\/strong>, mix.
