(Maybe after I test it.)<\/p>\n<p>OK, tested and it&#8217;s pretty good. You could add spinach and\/or black beans or swap out the chicken for shrimp or beef.<\/p>\n<ul>\n<li><span class=\"ingredient-name\">12.5 oz can chicken, drained<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup pepper jack cheese<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup cheddar cheese<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">oz can diced green chilies<\/span><\/li>\n<li><span class=\"quantity\">28<\/span><span class=\"ingredient-name\">oz enchilada sauce or red or green salsa with 2 TBS tomato paste<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">flour tortillas<\/span><\/li>\n<\/ul>\n<p>Preheat oven to 350\u00b0F.<\/p>\n<p><strong>For salsa:<\/strong><\/p>\n<p>Pour <strong>salsa<\/strong> into a 2 qt pan. Add 2 TBS <strong>tomato paste.<\/strong> Heat to boil, reduce to simmer for about 10 to 15 minutes. Use a stick blender or regular blender to puree. Adjust thickness with additional <strong>tomato paste<\/strong> or simmer longer.<\/p>\n<p><strong>Assemble:<\/strong><\/p>\n<p>Spread \u00bd cup of the <strong>sauce<\/strong> onto the bottom of a greased 9\u00d713 baking dish.<\/p>\n<p>In a medium size bowl, combine the <strong>DRAINED chicken<\/strong>, <strong>diced green chilis<\/strong>, \u00be cup <strong>pepper jack<\/strong>, \u00be cup <strong>cheddar<\/strong>, and \u00bd cup of the <strong>sauce<\/strong>.<\/p>\n<p>Evenly fill the <strong>tortillas<\/strong> with the <strong>chicken mixture<\/strong> and then roll and place them seam-side down in the baking dish.<\/p>\n<p>Cover with remaining <strong>sauce<\/strong> and <strong>cheese.<\/strong><\/p>\n<p><strong>Bake:<\/strong><\/p>\n<p>Bake for 20 to 25 minutes or until the <strong>cheese<\/strong> is melted and bubbly.<\/p>\n<p>Remove from oven and rest for 5 to 10 minutes.
