Adjust or swap vegetables to suite your needs.<br \/>\nPrep: 15 Cook: 20 to 30<\/p>\n<ul>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">oz fingerling potatoes or baby potatoes <\/span><\/li>\n<li><span class=\"quantity\">4-6<\/span><span class=\"ingredient-name\">carrots<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">head broccoli<\/span><\/li>\n<li><span class=\"ingredient-name\">Ranch spice mix, Optional, see below<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Olive oil<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Salt &amp; pepper<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nPrep:<\/strong><\/p>\n<p>Adjust rack to top and middle positions and preheat oven to 450\u00b0F. Wash\u00a0and dry produce.<\/p>\n<p>Halve, peel, and cut <strong>onions<\/strong> into \u00bd-inch-thick wedges.<\/p>\n<p>Trim, peel, and cut <strong>carrots<\/strong> on a diagonal into \u00bd-inch-thick pieces.<\/p>\n<p>Cut <strong>broccoli <\/strong>into bite-size florets if necessary.<\/p>\n<p><strong>Roast veggies: <\/strong><\/p>\n<p>Toss <strong>potatoes<\/strong> on one side of a baking sheet with a drizzle of <strong>olive oil<\/strong>, a good sprinkle of <strong>Ranch Seasoning<\/strong> and a pinch of <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Toss <strong>onion,<\/strong> and <strong>carrots<\/strong> on the other side of the baking sheet with a large drizzle of <strong>olive oil<\/strong>, a good sprinkle of <strong>Ranch Seasoning<\/strong> (optional) and a pinch of <strong>salt<\/strong> and <strong>pepper.<\/strong> Toss to coat with <strong>oil<\/strong> and <strong>spices.<\/strong><\/p>\n<p>Roast on top rack for ten minutes.
