I added the salmon around 2015.<br \/>\nI made a new version in 2025 without the salmon but added some vegetables.<\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">sea scallops, foot removed<\/span><\/li>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">21-25 count shrimp, peeled and deveined<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup pearl onions, frozen<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup corn, frozen<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup peas, frozen<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup Israeli couscous<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup shrimp shells and tails<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">water<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp fish sauce<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<li><span class=\"id-ingredient-name\">butter<\/span><\/li>\n<li><span class=\"id-ingredient-name\">oil<\/span><\/li>\n<li><\/li>\n<\/ul>\n<p>Prep:<\/p>\n<p>Defrost, rinse and dry <strong>scallops<\/strong> and <strong>shrimp<\/strong> dry on paper towel.<\/p>\n<p>Place frozen <strong>peas, onions<\/strong> and <strong>corn<\/strong> in a microwave safe bowl. Cover and microwave for 2 minutes.<\/p>\n<p><strong>Shrimp stock: <\/strong><\/p>\n<p>Place <strong>shrimp shells<\/strong> in a saucepan and add 14 oz of <strong>water.<\/strong> Bring to boil and reduce to medium low heat. Bowl lightly for 10 minutes, occasionally mashing with a masher or large fork. Pour through a fine mesh strainer into heat proof container. Discard <strong>shells<\/strong> and rinse saucepan.<\/p>\n<p><strong>Cook couscous:<\/strong><\/p>\n<p>Return saucepan to heat and add 2 TBS <strong>butter.<\/strong> Add <strong>couscous<\/strong> and saut\u00e9 until it is light brown, about 5 minutes.<\/p>\n<p>Add <strong>shrimp stock<\/strong> and \u00bd tsp <strong>fish sauce<\/strong> to saucepan with <strong>couscous.<\/strong> Bring to boil and reduce heat to simmer. Cover and cook for 5 minutes. Remove cover and add <strong>peas, onions<\/strong> and <strong>corn<\/strong> on top of couscous. Cover and cook for another 5 minutes.<\/p>\n<p><strong>Seafood:<\/strong><\/p>\n<p>Heat a 12-inch skillet over medium high heat, add 2 TBS <strong>butter<\/strong> and melt until it foams. Add 1 TBS <strong>oil.<\/strong> Mix. Add <strong>shrimp<\/strong> and <strong>scallops<\/strong> to pan, spread out and cook on the first side until lightly browned, about 3 minutes. Turn <strong>seafood<\/strong> over and cook on the other side until lightly browned. Push to edges of pan.<\/p>\n<p>Remove cover from <strong>couscous,<\/strong> stir to mix <strong>vegetables<\/strong> and dump into center of skillet. Mix gently.<\/p>\n<p><strong>Finish:<\/strong><\/p>\n<p>Season to taste with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Serve, placing a pat of <strong>butter<\/strong> on top of each serving<\/p>\n<p>.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yields: 2 to 3 Scott Nowell Circa 2004: This started out with salmon, but without the couscous.
