Grease two 9-inch springform pans.<\/p>\n<p>Sift the <strong>dry ingredients<\/strong> into a bowl. Add the <strong>oil, eggs,<\/strong> and <strong>vanilla.<\/strong> Beat well. Fold in the <strong>walnuts, coconut, carrots<\/strong> and <strong>pineapple.<\/strong><\/p>\n<p>Pour the <strong>batter<\/strong> into the prepared pans. Set on the center rack of the oven and bake until the edges have pulled away from the sides and a cake tester inserted in the center comes out clean, 50 minutes.<\/p>\n<p>Cool on a cake rack for 3 hours. Fill and frost the <strong>cake<\/strong> with the <strong>cream cheese frosting.<\/strong><\/p>\n<p><strong>Frosting<\/strong><\/p>\n<p>Cream together the <strong>cream cheese<\/strong> and <strong>butter<\/strong> in a mixing bowl.<\/p>\n<p>Slowly sift in the <strong>confectioners\u2019 sugar<\/strong> and continue beating until fully incorporated.
