In this pecan pie recipe, we focused on the things that matter: the deep flavor of toasted pecans and a caramelly custard.<br \/>\n<strong>Filling and assembly:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups pecan halves<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">large eggs, room temperature, beaten to blend<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup light corn syrup<\/span><\/li>\n<li><span class=\"quantity\">\u2154<\/span><span class=\"ingredient-name\">cup (packed) light brown sugar<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS robust-flavored (dark) molasses (not blackstrap)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS vanilla extract<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp kosher salt<\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">TBS unsalted butter, melted, slightly cooled<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nFilling and assembly:<\/strong><\/p>\n<p>Preheat oven to 350\u00b0F. Toast <strong>pecans<\/strong> on a rimmed baking sheet until browned and fragrant, 8\u201310 minutes. Let <strong>pecans<\/strong> cool.<\/p>\n<p>Reduce oven temperature to 325\u00b0F. Whisk <strong>eggs,<\/strong> <strong>corn syrup<\/strong>, <strong>brown sugar, molasses, vanilla,<\/strong> and <strong>salt<\/strong> in a large bowl until smooth. Slowly whisk in <strong>melted butter<\/strong> until combined. Fold in <strong>pecans<\/strong> and pour into cooled <strong>crust.<\/strong><\/p>\n<p>Bake <strong>pie<\/strong> until edges are set and slightly puffed but center is recessed and wobbles like Jell-O, 55\u201370 minutes (it will continue to set after baking). Transfer to a wire rack and let cool for at least 3 hours before slicing. Serve with ice cream.<\/p>\n<p><strong>Do ahead: Pie<\/strong> can be baked 1 day ahead; tightly wrap and chill.
