There\u2019s pan-seared maple glazed salmon, creamy mashed potatoes, and sauteed green beans and shallots.<br \/>Prep: 10 Cook: 40<\/p>\n<ul>\n<li><span class=\"quantity\">12<\/span><span class=\"ingredient-name\">oz potatoes<\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">oz green beans<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">shallot<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">oz thyme <\/span><\/li>\n<li><span class=\"quantity\">16<\/span><span class=\"ingredient-name\">oz salmon fillet, cut into 4 pieces<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup pure maple syrup<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup soy sauce<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp minced garlic<\/span>\u00a0<\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">TBS sour cream<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<li><span class=\"id-ingredient-name\">olive oil<\/span><\/li>\n<li><span class=\"id-ingredient-name\">cooking oil or ghee<\/span><\/li>\n<li><span class=\"id-ingredient-name\">butter<\/span><\/li>\n<\/ul>\n<p><strong><br \/>Cook potatoes: <\/strong><\/p>\n<p>Wash and dry <strong>produce.<\/strong><\/p>\n<p>Dice <strong>potatoes<\/strong> into \u00bd-inch pieces.<\/p>\n<p><strong>Tip:<\/strong> For a smoother texture, peel <strong>potatoes<\/strong> first.<\/p>\n<p>Place <strong>potatoes<\/strong> in a large pot with a few <strong>thyme sprigs<\/strong> and enough <strong>salted water<\/strong> to cover by 2 inches. Bring to a boil and cook until <strong>potatoes<\/strong> are tender, 15-20 minutes.<\/p>\n<p>Remove and discard <strong>thyme sprigs.<\/strong> Reserve \u00bd cup <strong>potato cooking liquid<\/strong>, then drain and return <strong>potatoes<\/strong> to pot.<\/p>\n<p>Mash with <strong>sour cream<\/strong>, <strong>salt,<\/strong> and <strong>pepper<\/strong> until smooth and creamy, adding reserved <strong>potato cooking liquid<\/strong> a splash at a time as needed.<\/p>\n<p>Keep covered off heat until ready to serve.<\/p>\n<p><strong>Make sauce:<\/strong><\/p>\n<p>Mix \u00bd cup maple syrup, \u00bc cup soy sauce and 1 tsp minced garlic.<\/p>\n<p><strong>Marinate salmon:<\/strong><\/p>\n<p>Place pieces of salmon in plastic bag and pour marinade over salmon. Manipulate the bag to coat all of the salmon. Set aside for 30 minutes.<\/p>\n<p><strong>Pre-cook green beans: <\/strong><\/p>\n<p>Bring a large pot of <strong>water<\/strong> to a boil and season heavy with salt. Note, it should taste like the ocean.<\/p>\n<p>Next, add the <strong>trimmed green beans<\/strong> and boil for 3 to 4 minutes or until al dente or slightly crunchy.<\/p>\n<p>Immediately remove them from the pot and strain them. Set aside.<\/p>\n<p><strong>Cook salmon &amp; prep shallot: <\/strong><\/p>\n<p>Meanwhile, remove salmon from marinade and pat <strong>salmon<\/strong> dry with paper towels, season all over with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Heat a drizzle of <strong>oil<\/strong> in a large, preferably nonstick, pan over medium-high heat. Add <strong>salmon<\/strong> to pan, <strong>skin<\/strong> side down. Cook until <strong>skin<\/strong> is crisp, and <strong>fish<\/strong> is almost cooked through, 5- to 7 minutes.\u00a0<\/p>\n<p>While <strong>salmon<\/strong> cooks, pour marinade into small pan and bring to a boil over medium high heat. Reduce heat and simmer until marinade reduces and gets a syrupy consistency.<\/p>\n<p>Also, halve, peel, and mince the <strong>shallot.<\/strong><\/p>\n<p>Paint salmon with <strong>marinade<\/strong>. Turn salmon over and cook until cooked through, 1- to 2-minutes more. Turn off heat. Transfer to a plate.<\/p>\n<p><strong>Saut\u00e9 green beans: <\/strong><\/p>\n<p>In a large saut\u00e9 pan over medium-low heat add in the <strong>butter<\/strong> and coat the bottom of the pan. Add the minced <strong>shallot<\/strong> and saut\u00e9 for 2- to 3 minutes.<\/p>\n<p>Add the <strong>green beans<\/strong> to the <strong>butter,<\/strong> season with <strong>salt<\/strong> and <strong>pepper<\/strong> and fold the <strong>green beans<\/strong> into the <strong>butter <\/strong>and<strong> shallot<\/strong> until coated on all sides.<\/p>\n<p><strong>Mash potatoes: <\/strong><\/p>\n<p>Heat pot with drained <strong>potatoes<\/strong> over medium-low heat. Mash with <strong>sour cream<\/strong> and 1 TBS <strong>butter<\/strong> until smooth and creamy, adding splashes of reserved <strong>potato cooking liquid<\/strong> as needed.<\/p>\n<p>Stir in a drizzle of <strong>oil<\/strong> and season with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Keep covered off heat until ready to serve.<\/p>\n<p><strong>Finish &amp; serve: <\/strong><\/p>\n<p>Divide <strong>salmon,<\/strong> <strong>green beans<\/strong>, and <strong>mashed potatoes<\/strong> between plates.
