Prep: 5 Cook: 20<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp turmeric<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">scallions<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">TBS sour cream<\/span><\/li>\n<li><span class=\"quantity\">10<\/span><span class=\"ingredient-name\">oz diced chicken thighs<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp <span style=\"color: #ff0000;\"><strong>hot sauce<\/strong><\/span><\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup jasmine rice <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">oz chicken stock concentrate<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lemon <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tomato<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS mayonnaise<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp garlic powder<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS shawarma spice blend, recipe follows<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">pitas<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<li><span class=\"id-ingredient-name\">cooking oil<\/span><\/li>\n<li><span class=\"id-ingredient-name\">butter<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nMake rice: <\/strong><\/p>\n<p>In a small pot, melt 1 TBS <strong>butter<\/strong> over medium heat. Stir in \u00bc tsp <strong>turmeric,<\/strong> cook stirring frequently, until fragrant, 30-60 seconds.<\/p>\n<p>Stir in <strong>rice,<\/strong> \u00be cup <strong>water, stock concentrate,<\/strong> a big pinch of <strong>salt,<\/strong> and <strong>pepper.<\/strong> Cover and bring to a boil, then reduce to a simmer. Cook until <strong>rice<\/strong> is tender, 15-18 minutes. Keep covered off heat until ready to serve.<\/p>\n<p><strong>Prep: <\/strong><\/p>\n<p>Meanwhile, bring 2 TBS <strong>butter<\/strong> to room temperature. Wash and dry <strong>produce.<\/strong><\/p>\n<p>Quarter <strong>lemon.<\/strong> Trim and thinly slice 2 <strong>scallions,<\/strong> separating <strong>whites<\/strong> from <strong>greens.<\/strong> Dice <strong>tomato<\/strong> into \u00bd-inch pieces.<\/p>\n<p><strong>Mix sauce: <\/strong><\/p>\n<p>In a small bowl, combine 1<span class=\"quantity\">\u00bd TBS<\/span> <strong>sour cream, <\/strong>2 TBS<strong> mayonnaise, 1 tsp garlic powder,<\/strong> and a squeeze of <strong>lemon.<\/strong> Add <strong>water<\/strong> 1 tsp at a time until mixture reaches a drizzling consistency<\/p>\n<p><strong>Cook chicken: <\/strong><\/p>\n<p>Pat <strong>chicken<\/strong> dry with paper towels, season with <strong>Shawarma Spice Blend, salt,<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Heat a drizzle of <strong>oil<\/strong> in a large pan over medium-high heat. Add <strong>chicken<\/strong> and <strong>scallion whites,<\/strong> cook, stirring occasionally, until <strong>chicken<\/strong> is browned and cooked through, 4- to 6-minutes.<\/p>\n<p><strong>Toast &amp; butter pitas: <\/strong><\/p>\n<p>Toast <strong>pitas<\/strong> until softened and warmed through.<\/p>\n<p>Spread with softened <strong>butter,<\/strong> then cut each <strong>pita<\/strong> into quarters.<\/p>\n<p><strong>Finish &amp; serve: <\/strong><\/p>\n<p>Once <strong>rice<\/strong> is done, fluff with a fork, stir in half the <strong>scallion greens.<\/strong> Season with <strong>salt<\/strong> and <strong>pepper<\/strong> to taste.<\/p>\n<p>Divide <strong>rice<\/strong> between bowls.
