Fresh corn is best for this, but frozen corn would work as well. If using the latter, add a bit of water when cooking before you add the milk.<br \/>\nPrep: Cook:<\/p>\n<ul>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">ears fresh corn or one 10 oz bag frozen<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<li><span class=\"id-ingredient-name\">sliver of garlic<\/span><\/li>\n<li><span class=\"id-ingredient-name\">sea salt<\/span><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">cup milk<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup heavy cream<\/span><\/li>\n<li><span class=\"id-ingredient-name\">fresh sage leaves or chopped parsley, for garnish<\/span><\/li>\n<\/ul>\n<p>Scrape <strong>corn kernels<\/strong> from <strong>cobs,<\/strong> running knife edge along <strong>cobs<\/strong> to squeeze out <strong>juices.<\/strong> (If the <strong>corn<\/strong> is not very fresh, then blanch in boiling water for 2 to 3 minutes before scraping <strong>kernels<\/strong> from <strong>cobs.)<\/strong><\/p>\n<p>Place a medium saucepan over medium heat. Drop in <strong>butter<\/strong> and melt until foamy. Add <strong>corn, garlic<\/strong> and <strong>juices.<\/strong> Season with <strong>salt<\/strong> and cook until <strong>kernels<\/strong> become tender. Pour in <strong>milk<\/strong> and simmer until <strong>milk<\/strong> is almost gone. Pour in <strong>cream<\/strong> and simmer for 5 minutes.
