Fennel is a late winter-early spring crop that works triple time for us here: The bulb is sweet and soft, sliced stalks are crisp-tender and the fronds are chopped for an herb garnish. While fully cooked chicken sausage adds just enough richness, feel free to use any fresh or fully cooked chicken or pork sausage you have and like (just remove fresh sausage from its casings before browning).<\/p>\n<ul>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">TBS extra-virgin olive oil<\/span><\/li>\n<li><span class=\"quantity\">12-16<\/span><span class=\"ingredient-name\">oz fully cooked chicken sausage, any flavor, cut into \u00bd-inch pieces<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">large fennel, bulb coarsely chopped, stalks thinly sliced, fronds finely chopped<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">garlic cloves, chopped<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and pepper<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">quarts (6 cups) chicken broth<\/span><\/li>\n<li><span class=\"quantity\">10-12<\/span><span class=\"ingredient-name\">oz (approx.) fresh or frozen cheese, spinach or mushroom tortellini <\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups chopped vegetables (such as snap or snow peas, green beans, asparagus, kale, spinach or escarole), or frozen peas<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Grated Parmesan, for serving<\/span><\/li>\n<\/ul>\n<p>Heat the <strong>oil<\/strong> in a large pot or Dutch oven over medium-high.<\/p>\n<p>Add the <strong>sausage<\/strong> and cook, stirring once or twice, until browned and crisp all over, 6 to 8 minutes.<\/p>\n<p>Add the chopped <strong>fennel bulb<\/strong> and <strong>garlic,<\/strong> season with <strong>salt<\/strong> and <strong>pepper,<\/strong> and cook, scraping up the browned bits as you go, until softened, 5 to 7 minutes.<\/p>\n<p>Add the <strong>chicken broth<\/strong> and bring to a boil, then reduce heat and simmer until the <strong>broth<\/strong> is flavorful, 5 to 7 minutes. Scrape the browned bits from the bottom of the pot. Taste and season with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Add the <strong>tortellini<\/strong> and cook according to package directions.<\/p>\n<p>In the last three minutes of the <strong>tortellini<\/strong> cooking, add the <strong>chopped vegetables<\/strong> and up to \u00bd cup sliced <strong>fennel stalks.<\/strong> (For some <strong>tortellini,<\/strong> that might mean adding the <strong>vegetables<\/strong> with the <strong>pasta.)<\/strong><\/p>\n<p>Remove from heat and stir in up to \u00bc cup <strong>chopped fennel fronds<\/strong>.<\/p>\n<p>Serve in bowls topped with <strong>parmesan<\/strong> and more <strong>black pepper<\/strong>.<\/p>\n\n\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 4 Adapted from: NY Times This lighter take on hearty sausage soup is cozy with chicken sausage, delicate tortellini, fennel and whatever green vegetables are gracing your market.
