I can see why: It\u2019s packed with rotisserie chicken, beans, corn, and a blend of cozy spices, making it the perfect comfort food to warm up with.<br \/>\nPrep: 30 Cook: 40<\/p>\n<p><strong>Chicken tortilla soup:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">(15-oz) cans white beans, divided<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS neutral oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">medium yellow onion, finely chopped<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Kosher salt<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Freshly ground black pepper<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">cloves garlic, finely chopped<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS ground cumin<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS smoked paprika<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp (or more) <span style=\"color: #ff0000;\"><strong>chipotle chili powder<\/strong><\/span><\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">(15-oz) can <strong><span style=\"color: #ff0000;\">fire-roasted diced tomatoes with green chilis<\/span><\/strong><\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">(15-oz) can black beans, drained, unrinsed<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">cups low-sodium chicken broth<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS masa harina<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">cups shredded cooked chicken (from about 1 rotisserie chicken)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup frozen corn kernels<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup full-fat sour cream<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">TBS fresh lime juice<\/span><\/li>\n<\/ul>\n<p><strong>Tortilla strips &amp; assembly:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">(5&#8243;) corn tortillas, sliced into \u00bd&#8221; strips<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS (or more) neutral oil<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Kosher salt<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Fresh cilantro, chopped avocado, shredded cheddar, and lime wedges, for serving (optional)<\/span><\/li>\n<\/ul>\n<p>In a blender or food processor, blend 1 can of <strong>white beans<\/strong> plus their <strong>liquid<\/strong> until smooth. Alternatively, in a medium bowl, mash <strong>white beans<\/strong> with a potato masher or large spoon until smooth.<\/p>\n<p>In a large Dutch oven or heavy pot over medium heat, heat <strong>oil.<\/strong> Add <strong>onion<\/strong> and cook, stirring, until softened, for about 7 minutes, season with <strong>salt<\/strong> and <strong>pepper.<\/strong> Add <strong>garlic, cumin, paprika,<\/strong> and <span style=\"color: #ff0000;\"><strong>chili powder<\/strong><\/span> and cook, stirring and adding more <strong><span style=\"color: #ff0000;\">chili powder<\/span><\/strong> if needed, until fragrant, for about 2 minutes. Add <span style=\"color: #ff0000;\"><strong>tomatoes<\/strong><\/span> and cook, stirring occasionally, until slightly thickened, for about 5 minutes, season with <strong>salt<\/strong> and <strong>pepper.<\/strong> Add reserved <strong>pureed beans,<\/strong>\u00a0<strong>black beans, broth,<\/strong> and remaining 1 can <strong>white beans<\/strong> and their <strong>liquid.<\/strong> Bring to a boil, then reduce heat to medium-low. Simmer, stirring occasionally, until slightly thickened and flavors meld, for about 20 minutes.<\/p>\n<p>In a small bowl, mix <strong>masa harina<\/strong> and 2 TBS <strong>water<\/strong> until combined, stir into <strong>soup.<\/strong> Add <strong>chicken<\/strong> and <strong>corn,<\/strong> cook, stirring occasionally, until heated through, for about 10 minutes. Stir in <strong>sour cream<\/strong> and <strong>lime juice,<\/strong> season with <strong>salt<\/strong> and <strong>pepper,<\/strong> if needed.<\/p>\n<p><strong>Tortilla Strips &amp; Assembly:<\/strong><\/p>\n<p>Preheat oven to 400\u00b0F. In a small bowl, toss <strong>tortilla strips<\/strong> with <strong>oil,<\/strong> adding a little more <strong>oil<\/strong> if needed, until well coated. Spread on a baking sheet.<\/p>\n<p>Bake <strong>strips,<\/strong> checking at the 7-minute mark, until crispy, 8 to 10 minutes.<\/p>\n<p>Ladle <strong>soup<\/strong> into bowls. Top with <strong>tortilla strips, cilantro, avocado,<\/strong> and <strong>cheddar<\/strong> (if using).
