{"id":55883,"date":"2026-02-17T23:34:44","date_gmt":"2026-02-17T23:34:44","guid":{"rendered":"https:\/\/nowellfamily.org\/cookbook\/?p=55883"},"modified":"2026-02-17T23:34:44","modified_gmt":"2026-02-17T23:34:44","slug":"shortcut-general-tsos-chicken","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2026\/02\/17\/shortcut-general-tsos-chicken\/","title":{"rendered":"Shortcut General Tso\u2019s Chicken"},"content":{"rendered":"<h4 style=\"text-align: center;\">Yield: 4<\/h4>\n<h6 style=\"text-align: center;\">Adapted from: Woks of Life<\/h6>\n<p>Ground chicken is the key to making Shortcut General Tso\u2019s Chicken that cuts out chopping and deep-frying steps without compromising flavor!<br \/>\nPrep: 20 Cook: 15<\/p>\n<p><strong>For the chicken:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb ground chicken<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp Shaoxing wine<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp ground white pepper<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp sesame oil<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS AP flour<\/span><\/li>\n<li><span class=\"quantity\">\u2153<\/span><span class=\"ingredient-name\">cup cornstarch<\/span><\/li>\n<\/ul>\n<p><strong>For the sauce:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">\u2153<\/span><span class=\"ingredient-name\">cup low sodium chicken stock<\/span><\/li>\n<li><span class=\"quantity\">3\u00bd<\/span><span class=\"ingredient-name\">TBS brown sugar<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS light soy sauce<\/span><\/li>\n<li><span class=\"quantity\">2\u00bd<\/span><span class=\"ingredient-name\">tsp rice vinegar<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp dark soy sauce<\/span><\/li>\n<\/ul>\n<p><strong>For the rest of the dish:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">cups broccoli florets (about 8 oz)<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">TBS neutral oil<\/span><\/li>\n<li><span class=\"quantity\">3-5<\/span><span class=\"ingredient-name\"><strong><span style=\"color: #ff0000;\">dried red chili peppers<\/span><\/strong> (optional)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cloves garlic (minced)<\/span><\/li>\n<\/ul>\n<p>In a medium bowl, mix the <strong>ground chicken<\/strong> with the <strong>Shaoxing wine, salt, white pepper,<\/strong> and <strong>sesame oil.<\/strong> Set aside to marinate while you prep the other ingredients. (Or if making ahead, cover and refrigerate overnight.)<\/p>\n<p><strong>Make the sauce:<\/strong><\/p>\n<p>To a measuring cup, add the <strong>chicken stock, brown sugar, light soy sauce,<\/strong> <strong>rice vinegar,<\/strong> and <strong>dark soy sauce.<\/strong> Set aside. Set <strong>water<\/strong> to boil for steaming the <strong>broccoli.<\/strong><\/p>\n<p>While that\u2019s happening, add the <strong>flour<\/strong> and <strong>cornstarch<\/strong> to a shallow dish, stirring with a fork or whisk to combine. Break up the <strong>ground chicken<\/strong> into pieces on top of the <strong>cornstarch,<\/strong> then use your fingers to break up the <strong>ground chicken<\/strong> into nuggets\/large chunks and toss them in the <strong>cornstarch flour mixture.<\/strong><\/p>\n<p>Heat your wok or skillet over high heat. Add the <strong>oil<\/strong> and <strong>ground chicken<\/strong> in a single layer and fry until golden. Once a golden crust has formed, use a wok spatula to flip the <strong>chicken<\/strong> and let it brown once more undisturbed. Repeat until the <strong>chicken<\/strong> is uniformly seared. Remove from the wok, leaving behind any <strong>oil.<\/strong><\/p>\n<p>Add the <strong>broccoli<\/strong> to the steamer and steam for 5-6 minutes until crisp tender.<\/p>\n<p>With the heat on medium-high, add the <span style=\"color: #ff0000;\"><strong>red chili peppers<\/strong><\/span> and cook for 1 minute. Add the <strong>garlic<\/strong> and cook for another 30 seconds to a minute.<\/p>\n<p>Stir up your <strong>sauce<\/strong> and add it to the pan. Bring to a simmer. Add the <strong>chicken,<\/strong> toss until the <strong>chicken<\/strong> is coated and the <strong>sauce<\/strong> is caramelized and sticky.
