It\u2019s the perfect sauce for your homemade or store-bought lobster ravioli.<br \/>\nPrep: 5 Cook: 15<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS unsalted butter<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">shallot<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cloves fresh garlic<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp tomato paste<\/span><\/li>\n<li><span class=\"quantity\">\u2153<\/span><span class=\"ingredient-name\">cup white wine<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup heavy cream<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">oz freshly grated parmesan cheese (about 1 cup when finely grated)<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp dried tarragon<\/span><\/li>\n<li><span class=\"quantity\">\u215b<\/span><span class=\"ingredient-name\">tsp paprika<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and pepper to taste<\/span><\/li>\n<li><span class=\"quantity\">9<\/span><span class=\"ingredient-name\">oz lobster ravioli<\/span><\/li>\n<li><span class=\"id-ingredient-name\">fresh parsley or basil (optional garnish)<\/span><\/li>\n<\/ul>\n<p>Set a large pot of well <strong>salted water<\/strong> to boil. Finely dice <strong>shallot,<\/strong> mince <strong>garlic,<\/strong> and finely grate <strong>parmesan cheese.<\/strong> Measure other ingredients.<\/p>\n<p><strong>Saut\u00e9:<\/strong><\/p>\n<p>Heat a saucepan over medium-low heat and melt <strong>butter.<\/strong> Saut\u00e9 <strong>shallots<\/strong> for about 5 minutes until softening and translucent. Add <strong>garlic<\/strong> and cook another minute while stirring.<\/p>\n<p><strong>Caramelize:<\/strong><\/p>\n<p>Add <strong>tomato paste<\/strong> and cook for 1-2 minutes while stirring until it darkens.<\/p>\n<p><strong>Deglaze:<\/strong><\/p>\n<p>Deglaze with <strong>white wine<\/strong> and cook for another 2 minutes, allowing the <strong>alcohol<\/strong> to burn off.<\/p>\n<p><strong>Simmer:<\/strong><\/p>\n<p>Slowly stir in <strong>heavy cream.<\/strong> Add <strong>tarragon, paprika,<\/strong> and <strong>parmesan cheese.<\/strong> Simmer on low until <strong>sauce<\/strong> reaches desired consistency, for about 5 minutes. Add <strong>salt<\/strong> and <strong>pepper<\/strong> to taste.<\/p>\n<p><strong>Boil:<\/strong><\/p>\n<p>While <strong>sauce<\/strong> is reducing, boil <strong>ravioli<\/strong> according to package directions. Transfer <strong>ravioli<\/strong> to the cream sauce with a splash of <strong>pasta water<\/strong> as needed.<\/p>\n<p><strong>Serve:<\/strong><\/p>\n<p>Serve hot.
