Not to be confused with the powdered sugar Mexican Wedding Cookies, this cake gets its flavor from pineapple and pecans that are folded into a sweet and fruity batter. Once the cake is baked it\u2019s pierced with holes to allow the decadent cream cheese buttercream frosting to seep in. The results are delicious. Prep: 15 Cook: 40<br \/>\n<strong><br \/>\nCake:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups flour<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups white sugar<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">eggs<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp baking soda<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup pecans, finely chopped<\/span><\/li>\n<li><span class=\"quantity\">16<\/span><span class=\"ingredient-name\">oz crushed pineapple with juice<\/span><\/li>\n<\/ul>\n<p><strong>Frosting:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">16<\/span><span class=\"ingredient-name\">oz cream cheese (2 packages)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups of powdered sugar<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup butter (2 sticks), softened<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nCake:<\/strong><br \/>\nPreheat oven to 350\u00b0F and grease a 9&#215;13 baking dish.<\/p>\n<p>In a large bowl, mix <strong>flour, sugar, baking soda,<\/strong> and <strong>salt.<\/strong><\/p>\n<p>Add <strong>eggs<\/strong> and <strong>pineapple.<\/strong> Mix until just combined, then fold in the <strong>chopped pecans.<\/strong><\/p>\n<p>Transfer <strong>batter<\/strong> to the prepared dish and bake for 40-45 minutes.<\/p>\n<p><strong>Frosting:<\/strong><br \/>\nAs <strong>cake<\/strong> bakes, mix the <strong>frosting<\/strong> ingredients until smooth.<\/p>\n<p>Pierce the top of the cooked <strong>cake<\/strong> with a fork all over.
