{"id":563,"date":"2017-11-18T09:59:16","date_gmt":"2017-11-18T17:59:16","guid":{"rendered":"http:\/\/nowellfamily.org\/cookbook\/?p=563"},"modified":"2020-01-21T00:25:05","modified_gmt":"2020-01-21T00:25:05","slug":"mini-yorkshire-puddings","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2017\/11\/18\/mini-yorkshire-puddings\/","title":{"rendered":"Yorkshire Puddings"},"content":{"rendered":"<h5 style=\"text-align: center;\">Yield: 6 to 12 individual puddings<\/h5>\n<h6 style=\"text-align: center;\">Recipe \u2013 Food &amp; Wine Magazine, February 1984<\/h6>\n<p>This is another great recipe from the Feb &#8217;84 Food &amp; Wine.\u00a0 Most of my family just call these pop-overs.\u00a0 By either name they are great.\u00a0 \u00a0I use these often to go with roast beef.\u00a0 The recipe here is for 6 or 12 individual puddings or 1 large one.<\/p>\n<ul>\n<li><strong><span class=\"&quot;sect-ingredient-name\">Single &#8211; Makes 6<\/span><\/strong><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">cup all purpose flour<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">eggs<\/span><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">cup plus 2 TBS milk<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup melted beef fat, reserved from roast (melted butter or oil can substitute).<\/span><\/li>\n<li><strong><span class=\"&quot;sect-ingredient-name\">Double &#8211; Makes 12<\/span><\/strong><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cup all purpose flour<\/span><\/li>\n<li><span class=\"quantity\">1\u00bc<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">5<\/span><span class=\"ingredient-name\">eggs<\/span><\/li>\n<li><span class=\"quantity\">2\u00bc<\/span><span class=\"ingredient-name\">cup milk<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup melted beef fat, reserved from roast.<\/span><\/li>\n<\/ul>\n<p>Preheat oven to 400\u00baF.<\/p>\n<p>Place the flour and salt in a medium bowl. Add the eggs and pour in half of the milk. Beat well with a wooden spoon until fairly smooth, about 1 minute.<\/p>\n<p>Add the remaining milk and beat for 2 minutes. The batter need not be perfectly smooth. Cover and set aside for 30 minutes to 1 hour or refrigerate overnight (up to 3 days).<\/p>\n<p>Spoon 1 teaspoon of the melted fat into each of six (or twelve) popover or 3-inch muffin tins.<\/p>\n<p>Place the popover pan in the hot oven and heat until the fat is sizzling and slightly smoking, about 3 minutes.<\/p>\n<p>Stir the batter, then ladle about \u00bc cup (3 oz for popover pan) into each muffin cup to fill halfway. Promptly return to the top third of the 400\u00ba oven and bake until the puddings are puffed, golden brown and crisp, about 20 to 25 minutes. Use the Double (12) ingredient quantities. The melted fat should be about \u215b of an inch deep in the bottom of the pan.<\/p>\n<p>Increase the cooking time to 40 minutes. Again DO NOT OPEN THE OVEN.
