The puff pastry is a great alternative to a biscuit or English muffin. The crust is flaky, buttery and easy to prep. You can easily adjust the filling for your taste and preference. In my hand pies I used scrambled eggs, crispy crumbled bacon, shredded cheese, and spinach. All these items were on hand in the fridge.<br \/>Prep: 30 Cook: 15<\/p>\n<ul>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">eggs + 1 egg white<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">egg yolk + splash of water for the egg wash<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp onion powder<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp smoked paprika<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp garlic powder<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup frozen spinach \u2013 thawed and drained<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup shredded sharp cheddar cheese<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup pre-cooked sausage scrambles -or- 4 strips of bacon, fried and crumbled <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">sheet of frozen puff pastry \u2013 thawed<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and pepper to taste<\/span><\/li>\n<\/ul>\n<p><strong><br \/>Scramble eggs:<\/strong><\/p>\n<p>After prepping the ingredients, whisk together the 4 <strong>eggs,<\/strong> one <strong>egg white<\/strong> and <strong>seasonings.<\/strong> Then scramble the <strong>eggs<\/strong> like you normally would for breakfast.<\/p>\n<p><strong>Prep pastry and fill:<\/strong><\/p>\n<p>Once the <strong>eggs<\/strong> were cooked, fold the <strong>sausage<\/strong> and\/or crumbled <strong>bacon<\/strong> pieces and <strong>spinach<\/strong> into the <strong>eggs.<\/strong> Set this aside while you prep the thawed <strong>puff pastry.<\/strong> Using a rolling pin, roll out the <strong>puff<\/strong>\u00a0<strong>pastry<\/strong> slightly. Divide the <strong>pastry<\/strong> into 6 squares.\u00a0<\/p>\n<p>Fill each square with the <strong>scrambled egg mixture<\/strong> and top each off with a pinch of <strong>cheese.<\/strong> Fold the corners in towards the center. Dab the corners with <strong>egg wash<\/strong> and pinch the ends of each corner together tightly. During the baking process they can separate as the <strong>pastry<\/strong> puffs up.<\/p>\n<p><strong>Egg wash and bake:<\/strong><\/p>\n<p>Brush each with <strong>egg wash.<\/strong> Season the tops with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Bake the <strong>hand pies<\/strong> in a 400\u00b0F oven for about 15 minutes.
