Prep these Savory Breakfast Hand Pies in advance, store them in the freezer and then reheat them later for a warm and wholesome weekday breakfast. Change up fillings as you like using sausage, saut\u00e9ed mushrooms and peppers.<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">package (15 oz) Simple Truth\u2122 Unroll &amp; Bake Pie Crusts<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS butter or olive oil<\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">large eggs, beaten with 1 TBS water<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and fresh ground black pepper, to taste<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">slices bacon, cooked until crisp and crumbled -or- 1 cup pre-cooked sausage scrambles<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">cups baby spinach<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup finely shredded white cheddar cheese<\/span><\/li>\n<\/ul>\n<p>Preheat oven to 375\u00b0F and line a baking sheet with parchment paper. Heat the <strong>butter<\/strong> or <strong>olive oil<\/strong> in a non-stick pan and pour in all but 1 TBS of the <strong>beaten eggs.<\/strong> The reserved <strong>egg<\/strong> will be used as an <strong>egg-wash.<\/strong> Cook the <strong>eggs<\/strong> over medium heat, stirring gently to <strong>scramble<\/strong> the <strong>eggs.<\/strong> Season with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Stir in the <strong>bacon<\/strong> or <strong>sausage<\/strong> and <strong>spinach<\/strong> to the warm eggs and cover for a minute or two to wilt the <strong>spinach.<\/strong> Stir in the <strong>cheese.<\/strong><\/p>\n<p>Roll out the pie crusts and cut each into 6 triangles. Divide the <strong>filling<\/strong> among 6 of the <strong>triangles,<\/strong> brush edges with <strong>egg wash<\/strong> and top with the remaining 6 <strong>pastry triangles.<\/strong> Seal edges with a fork and brush with <strong>egg wash<\/strong> and place hand pies on parchment lined baking sheet. Bake for 25-30 minutes until golden-brown. Enjoy warm.<\/p>\n<p><strong>Do ahead:<\/strong><\/p>\n<p>If you are making these in advance to freeze, be sure to cool them sufficiently before wrapping and freezing.
