{"id":56452,"date":"2026-06-25T21:11:21","date_gmt":"2026-06-25T21:11:21","guid":{"rendered":"https:\/\/nowellfamily.org\/cookbook\/?p=56452"},"modified":"2026-06-25T21:12:55","modified_gmt":"2026-06-25T21:12:55","slug":"smelts","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2026\/06\/25\/smelts\/","title":{"rendered":"Smelts"},"content":{"rendered":"<h4 style=\"text-align: center;\">Yield: 2 to 3<\/h4>\n<h6 style=\"text-align: center;\">Scott Nowell<\/h6>\n<p>My version of my mom\u2019s fried smelts.<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb smelts<\/span><\/li>\n<li><span class=\"quantity\">1\u20444<\/span><span class=\"ingredient-name\">cup cornmeal<\/span><\/li>\n<li><span class=\"quantity\">1\u20442<\/span><span class=\"ingredient-name\">cup flour<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt &amp; pepper<\/span><\/li>\n<li><span class=\"quantity\">1\u20442<\/span><span class=\"ingredient-name\">tsp paprika<\/span><\/li>\n<li><span class=\"id-ingredient-name\">vegetable oil<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nClean:<\/strong><\/p>\n<p>Snip off the heads and gently pull out the entrails (guts), then rinse the <strong>fish<\/strong> in cold water and pat them completely dry with a paper towel.<\/p>\n<p><strong>Season &amp; Dredge:<\/strong><\/p>\n<p>In a bowl or bag, toss the <strong>fish<\/strong> in a mixture of all-purpose <strong>flour,<\/strong> <strong>corn meal<\/strong>, <strong>salt<\/strong>, and <strong>paprika.<\/strong> Shake off any excess <strong>flour.<\/strong><\/p>\n<p><strong>Fry:<\/strong><\/p>\n<p>Heat 1\/4 to 1\/2 inch of <strong>vegetable oil<\/strong> in a heavy skillet or frying pan to about 350\u00b0F.
