Nowell<\/h4>\n<p>Vegetables, potatoes and chicken all roasted in one pan. A simple and tasty all-in-one-roast chicken recipe with minimal washing up.<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">chicken <\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">lemon, halved<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">TBS olive oil<\/span><\/li>\n<li><span class=\"quantity\">24<\/span><span class=\"ingredient-name\">oz new potatoes, halved<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">medium carrots (10\u00bd oz), peeled and cut into roughly 2-in long batons<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb Brussels Sprouts, trimmed and halved <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">long sprig fresh rosemary or a small bunch of thyme, leaves roughly chopped<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and pepper<\/span><\/li>\n<\/ul>\n<p>Preheat the oven to 400\u00b0F. Place the <strong>chicken<\/strong> in a large, roasting tin and remove any trussing elastic or string.<\/p>\n<p>Put the <strong>lemon pieces<\/strong> inside the <strong>chicken.<\/strong> Drizzle 1 TBS of the <strong>oil<\/strong> over the <strong>chicken.<\/strong> Season with <strong>salt<\/strong> and <strong>pepper<\/strong> and roast for 30 minutes.<\/p>\n<p>Put the <strong>vegetables<\/strong> and chopped <strong>herbs<\/strong> into a large bowl. Pour over the remaining <strong>oil<\/strong> and season with <strong>salt<\/strong> and <strong>pepper.<\/strong> Toss together. Place the <strong>vegetables<\/strong> around the <strong>chicken<\/strong> in the roasting tin and return to the oven for a further 20 minutes.<\/p>\n<p>Take the <strong>chicken<\/strong> out of the oven and stir the <strong>vegetables.<\/strong> Replace the <strong>chicken<\/strong> and roast for another 20 minutes.<\/p>\n<p>Check the <strong>chicken<\/strong> is fully cooked, thickest part of the <strong>thigh<\/strong> 170\u00b0F or more, <strong>breast<\/strong> 160\u00b0F.<\/p>\n<p>Move the <strong>chicken<\/strong> to a warmed plate and set aside to rest for 15 minutes. Spoon the <strong>vegetables<\/strong> into a warmed dish once the <strong>chicken<\/strong> is out of the tin. Serve the <strong>chicken<\/strong> carved into chunky pieces, with the <strong>vegetables<\/strong> and cooking <strong>juices<\/strong> spooned over.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 4 to 6 Servings S.
