Serve over rice or in lettuce cups for low carb option and you\u2019ll essentially have a copycat of lettuce wraps you\u2019d get from takeout!<br \/>\nPrep: 10 Cook: 10<br \/>\n<strong><br \/>\nFor the ground beef stir fry:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb 80-20 ground beef<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">medium zucchinis, sliced<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz brown mushrooms or baby Bella, sliced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">carrot julienned<\/span><\/li>\n<li><span class=\"id-ingredient-name\">chives or green onions, optional for garnish<\/span><\/li>\n<\/ul>\n<p><strong>For the sauce:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">TBS soy sauce<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">TBS BBQ sauce, original, sweet or smoky<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS real maple syrup<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">garlic cloves, grated or minced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp ginger, grated, or use 1 cube frozen ginger, or \u00bc tsp ground ginger<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS sesame oil<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nMix the sauce:<\/strong><\/p>\n<p>In a small bowl or measuring cup, combine all of the <strong>sauce ingredients<\/strong> and set aside<\/p>\n<p><strong>Brown the Beef :<\/strong><\/p>\n<p>Set a large skillet or Wok over medium\/high heat and add 1 TBS <strong>oil.<\/strong> Add <strong>beef<\/strong> and saut\u00e9, breaking it up with a spatula for about 5 minutes or until fully cooked through and lightly browned to build flavor. Transfer the <strong>beef<\/strong> to a separate bowl, keeping any <strong>oil<\/strong> in the pan.<\/p>\n<p><strong>Saut\u00e9 the veggies:<\/strong><\/p>\n<p>In the same skillet, add a little bit of <strong>oil<\/strong> if you don\u2019t have enough reserved from the <strong>ground beef<\/strong> and add all of your <strong>veggies, saut\u00e9ing<\/strong> and stirring frequently, for 2-3 minutes or until <strong>zucchini<\/strong> is half done and crunchy. Don\u2019t overcook them because they\u2019ll still be cooking a little more with the <strong>sauce<\/strong> and you don\u2019t want them to get mushy.<\/p>\n<p><strong>Add the ground beef and sauce:<\/strong><\/p>\n<p>Add the <strong>cooked ground beef<\/strong> back to the pan then add the <strong>sauce<\/strong> and stir to combine. Cook, stir occasionally for about two minutes or until fragrant. This gives the <strong>garlic<\/strong> and <strong>ginger<\/strong> a chance to cook lightly. <strong>Zucchini<\/strong> should be crisp-tender.<\/p>\n<p>Season to taste with <strong>salt<\/strong> and <strong>pepper<\/strong> and remove from heat. Serve over freshly cooked <strong>rice<\/strong> or in <strong>lettuce cups.<\/strong> Garnish with <strong>chives<\/strong> if desired.<\/p>\n<p><strong>Storage tips:<\/strong><\/p>\n<p>Allow the <strong>stir fry<\/strong> to cool before packing into an airtight container. Store in the fridge for up to 4 days or in the freezer for up to 3 months.
