When you flip to the second side, poke the <strong>sausage<\/strong> with a knife to release <strong>oil<\/strong> and <strong>juices.<\/strong><\/p>\n<p>Remove from heat and cool til able to handle. Cut <strong>sausage<\/strong> into 1-2 inch chunks. I use a mix of <span style=\"color: #ff0000;\"><strong>hot<\/strong> <\/span>and <strong>mild,<\/strong> and cut the <span style=\"color: #ff0000;\"><strong>hot<\/strong> <\/span>diagonally and the <strong>mild<\/strong> straight.<\/p>\n<p>Preheat oven to 450\u00b0F.<\/p>\n<p>Trim up the <strong>chicken<\/strong> and make two deep slashes through the <strong>skin,<\/strong> down to the <strong>bone.<\/strong><\/p>\n<p>Put <strong>peppers<\/strong> in large mixing bowl, add the sliced <strong>onion<\/strong> and the quartered <strong>potatoes.<\/strong> Add <strong>chicken, sausages<\/strong> and all <strong>juices<\/strong> and <strong>fat.<\/strong> Season with <strong>salt, pepper<\/strong> and <strong>herbs.<\/strong> Drizzle with <strong>olive oil<\/strong> and mix everything well.<\/p>\n<p>Pour into a large roasting pan and arrange to space <strong>thighs<\/strong> with the <strong>skin side <\/strong>up. Get <strong>potatoes<\/strong> exposed to the heat. Drizzle with more <strong>olive<\/strong>\u00a0oil and season with <strong>salt.<\/strong><\/p>\n<p>Cook in the center rack of the oven for 1 hour.
