They\u2019re good though\u2026<\/p>\n<p>For the story on the origin of Hermit Cookies see Bon Appetit&#8217;s <a href=\"https:\/\/www.bonappetit.com\/story\/hermit-cookie-reclusive-recipe\/\">hermit-cookie-reclusive-recipe.<\/a> Not the same recipe as appears here as it doesn&#8217;t contain molasses.<\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups plus 2 TBS all-purpose flour<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp baking soda<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp ground ginger<\/span><\/li>\n<li><span class=\"quantity\">1\u00be<\/span><span class=\"ingredient-name\">tsp ground cinnamon<\/span><\/li>\n<li><span class=\"quantity\">1\u00be<\/span><span class=\"ingredient-name\">tsp ground cloves<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup (1 stick) plus 1 TBS unsalted butter, room temperature<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup loosely packed light-brown sugar<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">large egg, room temperature<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup un-sulfured molasses<\/span><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">cup raisins<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nLine<\/strong> a baking sheet with parchment paper or a Silpat, set aside. In a medium bowl, sift together <strong>flour, baking soda, ginger, cinnamon, cloves,<\/strong> and <strong>salt;<\/strong> set aside.<\/p>\n<p>In the bowl of an electric mixer fitted with the paddle attachment, cream the <strong>butter<\/strong> and <strong>brown sugar<\/strong> on medium speed until light and fluffy, about 2 minutes. Add <strong>egg;<\/strong> beat until combined, scraping down sides of bowl once. Add <strong>molasses;<\/strong> beat until combined, and scrape down sides of bowl. Add the <strong>flour mixture<\/strong> and <strong>raisins;<\/strong> beat on low until dough just comes together, about 1 minute. The dough will still be very sticky. Cover with plastic wrap; place in refrigerator to chill 30 minutes.<\/p>\n<p>Preheat oven to 375\u00b0F.<\/p>\n<p>Remove <strong>dough<\/strong> from refrigerator, and turn out onto a clean work surface. Divide into 2 equal pieces, and shape each piece into a 12-inch <strong>log<\/strong> about 1\u00bd inches in diameter. Place on prepared baking sheet, at least 3 inches apart.<\/p>\n<p>Place in oven on the center rack.<\/p>\n<p>Bake for 20 to 22 minutes (<strong>High Altitude:<\/strong> 12 to 15 minutes) or until the edges are just barely crisp.<\/p>\n<p>The <strong>logs<\/strong> will flatten out and lengthen as they bake and get slightly puffy in the center. Set baking sheet on a wire rack to cool completely. Slice <strong>logs<\/strong> into 1- to 2-inch-wide bars. <strong>Hermit bars<\/strong> can be stored in an airtight container at room temperature up to 1 week.<\/p>\n<p>.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: about 30 1-inch bars Source lost 2012: I remembered my mom making these and dug around and found a recipe.
