Makes a great party appetizer.<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">small onion, diced<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">green pepper, diced<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">sweet red pepper, diced<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">cloves garlic, minced<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">TBS olive oil<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">sweet Italian sausages, casings removed<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup crushed tomatoes<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS chopped parsley<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp dried basil<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup light cream<\/span><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">cup shredded mozzarella \/ bread crumbs<\/span><\/li>\n<li><span class=\"quantity\">24<\/span><span class=\"ingredient-name\">large mushroom caps, cleaned &amp; stems removed<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nPreheat<\/strong> oven to 400\u00b0F.<\/p>\n<p>Heat 2 TBS <strong>oil<\/strong> over high heat until shimmering. Put <strong>garlic<\/strong> in <strong>oil,<\/strong> saut\u00e9 for 10 seconds. Add <strong>diced onion, peppers,<\/strong> and <strong>garlic.<\/strong> Saut\u00e9 until <strong>onion<\/strong> is translucent but not browned.<\/p>\n<p>Crumble <strong>sausage<\/strong> into pan with <strong>onion<\/strong> and <strong>peppers,<\/strong> stir and press into bottom of pan with large spoon to brown <strong>sausage.<\/strong> Cook until light brown. Drain excess <strong>fat.<\/strong> Add <strong>tomato, basil<\/strong> and <strong>parsley<\/strong> and cook about one minute. Add <strong>cream<\/strong> and reduce until thick. Remove from heat and stir in <strong>Mozzarella.<\/strong> Let cool. Add <strong>breadcrumbs<\/strong> to bind.<\/p>\n<p>In a large sauce pan, saut\u00e9 <strong>mushrooms<\/strong> in remaining <strong>olive oil.<\/strong> Drain and arrange on cookie sheet. Stuff with <strong>sausage<\/strong> mixture and bake at 400\u00b0F for 5 to 8 minutes.<\/p>\n<h3>Tip<\/h3>\n<p>With a few changes, the stuffing makes a real tasty filling for <strong>stuffed green peppers.<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">mushroom stuffing<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">green pepper tops, minced<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz ground beef<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup white rice, cooked<\/span><\/li>\n<\/ul>\n<p>Brown the <strong>ground beef<\/strong> and the minced <strong>peppers<\/strong> in a large skillet.\u00a0 When brown add the <strong>rice<\/strong> and the <strong>mushroom stuffing.<\/strong>\u00a0 Mix until heated through.\u00a0 Follow the prep and stuffing instructions for <a href=\"http:\/\/nowellfamily.org\/cookbook\/2017\/11\/18\/baked-stuffed-green-peppers\/\">stuffed green peppers<\/a>.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 24 pieces Hannah Jack Tavern, Merrimack, NH (closed) Circa 1988.\u00a0 This recipe comes from the then chef at Hannah Jack Tavern in NH.\u00a0 I took a class that he taught at That Kitchen Place in Amherst, NH.
