I should probably title this Pasta Semi-Primavera since I really like the addition of both chicken and kielbasa. The original didn\u2019t include any meat.<\/p>\n<ul>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">medium zucchini, sliced (3-4 cups)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups small broccoli florets<\/span><\/li>\n<li><span class=\"quantity\">8-16<\/span><span class=\"ingredient-name\">oz pasta<\/span><\/li>\n<li><span class=\"quantity\">\u2153<\/span><span class=\"ingredient-name\">cup pine nuts<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup olive oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS minced garlic<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">large tomatoes, skinned and chopped (about 4 cups)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup snow pea pods, cut in half diagonally<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp freshly ground black pepper<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup heavy cream<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup freshly grated Parmesan cheese<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup minced fresh basil (or 1 tsp dried)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb chicken, smoked sausage, kielbasa or combination.\u00a0(Optional)<\/span><\/li>\n<\/ul>\n<p>If using the optional <strong>chicken<\/strong> or <strong>sausage,<\/strong> cook and set aside.<\/p>\n<p>Bring a gallon of <strong>water<\/strong> to a boil in 6-8 quart pot. When boiling add 1 TBS <strong>salt<\/strong> and stir.<\/p>\n<p>While the water is heating, prepare a large bowl of <strong>ice water.<\/strong> Mix a couple of tsp of <strong>salt<\/strong> into the <strong>ice water.<\/strong><\/p>\n<p>Make a small X with a paring knife across the base of the <strong>tomatoes.<\/strong> Blanch the <strong>tomatoes<\/strong> in the boiling water for 1 minute. Remove and put in the <strong>ice water.<\/strong> This should cause the <strong>tomato skin<\/strong> toloosen and split at the X. Peal the <strong>skin<\/strong> starting at the X. Half the <strong>peeled tomatoes<\/strong> at their horizon and remove <strong>seeds<\/strong> with a spoon or your fingers. Chop the <strong>tomatoes.<\/strong> Set aside.<\/p>\n<p>Blanch the <strong>zucchini<\/strong> for 1 minute in the <strong>boiling water.<\/strong> Remove from <strong>boiling water<\/strong> and plunge into the <strong>ice water<\/strong><\/p>\n<p>Blanch the <strong>broccoli<\/strong> for 3-4 minutes in the <strong>boiling water<\/strong> until crisp. Remove from <strong>boiling water<\/strong> and plunge into the <strong>ice water<\/strong> with the <strong>zucchini.<\/strong><\/p>\n<p>Remove the <strong>broccoli<\/strong> and <strong>zucchini<\/strong> from the <strong>ice water<\/strong> to another bowl. Discard the <strong>ice water.<\/strong><\/p>\n<p>Add the <strong>pasta<\/strong> to the <strong>boiling water<\/strong> and cook to al dente. Slightly under cooked is best.<\/p>\n<p>While the <strong>pasta<\/strong> is cooking, spread the <strong>pine nuts<\/strong> of a cookie sheet and toast for 2-3 minutes under a broiler or in a toaster oven. Stir and toast for a few more minutes until golden. <strong>DON\u2019T BURN<\/strong> the <strong>nuts.<\/strong><\/p>\n<p>Save a cup of the <strong>pasta water<\/strong> and then drain the <strong>pasta<\/strong> and transfer to the bowl used for the <strong>ice water.<\/strong> Add a little <strong>oil<\/strong> and stir to coat to prevent sticking.<\/p>\n<p>In the pasta pot, heat the <strong>olive oil,<\/strong> add the <strong>garlic, tomatoes, zucchini, broccoli,<\/strong> <strong>snow pea pods<\/strong>, <strong>salt<\/strong> and <strong>pepper.<\/strong> Saut\u00e9 for 2-3 minutes.<\/p>\n<p>Add the <strong>pasta, meat, butter, cream, Parmesan, pine nuts<\/strong> and <strong>basil.<\/strong> Cook until heated through.<\/p>\n<p>Toss\/stir gently.
