Really an upgraded\u00a0 substitute for Hamburger Helper. This could easily take the addition of other vegetables such as broccoli or asparagus.<\/p>\n<ul>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz pasta, rotini, penne, etc.<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">medium onions, halved and sliced<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">scallions, sliced <\/span><\/li>\n<li><span class=\"quantity\">1-2<\/span><span class=\"ingredient-name\">tsp minced garlic<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS oil<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">oz mushrooms, sliced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb ground beef<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS red wine<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup beef stock<\/span><\/li>\n<li><span class=\"quantity\">1-2<\/span><span class=\"ingredient-name\">tsp corn starch<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and pepper to taste<\/span><\/li>\n<\/ul>\n<p>Bring <strong>water<\/strong> for <strong>pasta<\/strong> to a boil and cook <strong>pasta<\/strong> al dente.<\/p>\n<p>While heating <strong>water,<\/strong> heat a skillet over medium high heat. Add a TBS of <strong>oil<\/strong> and saut\u00e9 the <strong>onions<\/strong>\u00a0with a pinch of <strong>salt<\/strong> for\u00a04-5 minutes until softened. Half way through saut\u00e9ing the <strong>onion,<\/strong> add the <strong>scallions<\/strong> and <strong>garlic.<\/strong> When <strong>onions<\/strong> are done, remove to bowl and set aside.<\/p>\n<p class=\"Body\">If adding the optional <strong>mushrooms,<\/strong> in the same pan used for the <strong>onions,<\/strong> saut\u00e9 the mushrooms until nicely browned and add to the bowl with the <strong>onions.<\/strong><\/p>\n<p>In same pan used for <strong>onion,<\/strong> brown the <strong>ground beef,<\/strong> cooking until done. Drain the <strong>beef<\/strong> and set aside with <strong>onions.<\/strong><\/p>\n<p>Add <strong>red wine<\/strong> to <strong>beef<\/strong> pan and de-glaze over high heat for 1 minute or until reduced by a third. Add <strong>beef stock<\/strong> to pan and bring to a boil. Simmer for 2 to 3 minutes. Mix a TBS of <strong>corn starch<\/strong> with a little <strong>water<\/strong> and blend to form a slurry. Add to pan a bit at a time, whisking <strong>stock<\/strong> often as it comes to a boil and thickens. <strong>Salt<\/strong> and <strong>pepper<\/strong> to taste.<\/p>\n<p>Return <strong>beef<\/strong> and <strong>onions<\/strong> to pan and stir to mix. Add cooked <strong>pasta<\/strong> and stir to coat.
