I turned them into an enhancement for a pasta casserole with some chicken and broccoli. Hmm, good.<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb boneless, skinless chicken breast, whole or cubed <\/span><\/li>\n<li><span class=\"quantity\">6-8<\/span><span class=\"ingredient-name\">oz pasta, penne, rotini, etc.<\/span><\/li>\n<li><span class=\"id-ingredient-name\">olive oil<\/span><\/li>\n<li><span class=\"quantity\">1-2<\/span><span class=\"ingredient-name\">pinches <span style=\"color: #ff0000;\"><strong>crushed red pepper flakes<\/strong><\/span><\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">shallot, minced<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups cherry or grape tomatoes, halved<\/span><\/li>\n<li><span class=\"quantity\">3-4<\/span><span class=\"ingredient-name\">cups broccoli florets<\/span><\/li>\n<\/ul>\n<p>Season <strong>chicken<\/strong> on both sides with <strong>salt, pepper<\/strong> and <strong>olive oil.<\/strong><\/p>\n<p>Set a large pot of water to boil. When it boils, add <strong>salt<\/strong> to taste. Add <strong>pasta<\/strong> and cook to al dente. Remove <strong>water<\/strong> from <strong>pasta<\/strong> and set aside. Add <strong>broccoli<\/strong> to <strong>water<\/strong> and cook for 2-3 minutes until it is mostly cooked. Reserve 1\/2 cup <strong>pasta cooking liquid<\/strong>. Drain.<\/p>\n<p>Heat a TBS of <strong>olive oil<\/strong> in a large skillet on medium heat until hot but not smoking.<br \/>\nAdd <strong>chicken<\/strong> and cook about 4 minutes on each side to brown. Reduce heat to medium and flip until cooked through. 160\u00b0F at thickest spot. Remove to cutting board and rest. Slice <strong>chicken<\/strong> to bite sized pieces.<br \/>\nIf using <strong>cubed chicken,<\/strong> cook stirring occasionally until no longer <strong>pink<\/strong> in the middle of thickest piece.<br \/>\nRemove <strong>chicken<\/strong> from pan. Add another TBS of <strong>olive<\/strong>\u00a0oil, minced <strong>shallot, tomatoes<\/strong> and <span style=\"color: #ff0000;\"><strong>red pepper flakes<\/strong><\/span>. Saut\u00e9 until <strong>shallot<\/strong> starts to brown.<br \/>\nAdd <strong>tomato<\/strong> mixture to pasta pot with drained <strong>broccoli.<\/strong> Add <strong>chicken<\/strong> and <strong>pasta<\/strong> to pot with two TBS of <strong>olive oil,<\/strong> season with <strong>salt<\/strong> and <strong>pepper.<\/strong> You can also add some of the reserved <strong>pasta cooking liquid<\/strong> to make it <strong>saucier.<\/strong> Mix well until heated through.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 3 to 4 Servings Scott Nowell August 2017: Needed to use up some cherry tomatoes.
