I got an invite to a reception in AT&amp;T\u2019s suite in the hotel. One of the items served was breaded chicken strips with a honey-mustard sauce. This is my version with a mustard sauce pulled from a Frugal Gourmet (Jeff Smith) cookbook.<\/p>\n<ul>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">lb boneless, skinless chicken breasts<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup milk<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">egg<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup unseasoned bread crumbs<\/span><\/li>\n<li><span class=\"id-ingredient-name\">-or-<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup flour<\/span><\/li>\n<li><span class=\"quantity\">1\/8<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp fresh ground pepper<\/span><\/li>\n<li><span class=\"quantity\">1\/8<\/span><span class=\"ingredient-name\">tsp paprika<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">TBS cooking oil<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nTrim chicken breasts<\/strong> to remove fat. Slice crosswise into strips about a \u00bc to 3\/8 inch thick.<\/p>\n<p>Put <strong>breadcrumbs<\/strong> or <strong>flour<\/strong> in a large flat bowl or plate, and mix in <strong>spices.<\/strong><\/p>\n<p>Beat <strong>egg<\/strong> into <strong>milk<\/strong> and season.<\/p>\n<p>Dredge <strong>chicken strips<\/strong> in <strong>flour,<\/strong> dip <strong>chicken strips<\/strong> in <strong>milk<\/strong> and then roll in <strong>breading<\/strong> to coat evenly. (Shake a bunch in a plastic bag filled with <strong>breading.<\/strong><\/p>\n<p>Heat the <strong>butter<\/strong> and 2 TBS of the oil in a large skillet over high heat until the <strong>butter<\/strong> stops foaming and the <strong>oil<\/strong> is quite hot but not smoking. Add the <strong>chicken pieces<\/strong> in a single layer without crowding and cook until browned. Turn the <strong>chicken<\/strong> over and brown the other side. Remove to paper towels to absorb <strong>oil,<\/strong> then transfer to a serving dish. Cook remaining <strong>chicken.<\/strong> Add additional <strong>oil<\/strong> as necessary between batches and let <strong>oil<\/strong> get hot before adding <strong>chicken.<\/strong><\/p>\n<h3 style=\"text-align: center;\">Joe&#8217;s Florida Stone Crab Mustard Sauce<\/h3>\n<ul>\n<li><span class=\"quantity\">3\u00bd<\/span><span class=\"ingredient-name\">tsp dry English mustard (Coleman\u2019s)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup mayonnaise (not Miracle Whip)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp Worcestershire sauce<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp A1 Sauce<\/span><\/li>\n<li><span class=\"quantity\">1\/8<\/span><span class=\"ingredient-name\">cup light cream or half and half<\/span><\/li>\n<li><span class=\"quantity\">1\/8<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nBeat<\/strong> the <strong>dry mustard<\/strong> and <strong>mayonnaise<\/strong> together for 1 minute. Add the remaining <strong>ingredients<\/strong> and beat until the mixture reaches a creamy consistency.
