Lots of choices for the seasoning here. The recipe I adapted this from used Poultry Seasoning, but I like herbs de Provence better. You can use about anything that suits you. The number of servings depends on the quantity and thickness of the pork you use. The original called for inch thick chops. I used \u00bd inch thick cutlets. Adjust the cooking times to suit your pork. I think the thicker cutlets are the right choice.<\/p>\n<ul>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">pork chops or cutlets<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp herbs de Provence, Poultry Seasoning, Italian Seasoning, etc.<\/span><\/li>\n<li><span class=\"id-ingredient-name\">salt and pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">onion, sliced<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">cloves garlic, minced<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">TBS all-purpose flour<\/span><\/li>\n<li style=\"list-style-type: none;\"><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">cups chicken broth<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup buttermilk or 1 TBS Saco buttermilk powder and \u00bc cup water<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup water<\/span><\/li>\n<\/ul>\n<p>Pat the <strong>pork<\/strong> dry and <strong>season<\/strong> on both sides with <strong>salt, pepper<\/strong> and your chosen <strong>seasoning.<\/strong><\/p>\n<p>Heat 2 tablespoons of <strong>oil<\/strong> in a large skillet over medium high heat. Add <strong>pork<\/strong> and brown well on both sides. Remove to plate, reserve.<\/p>\n<p>Dump <strong>oil<\/strong> from pan and add 2 tablespoons of <strong>butter<\/strong> to pan over medium heat. Add the <strong>onions<\/strong> and a big pinch of <strong>salt.<\/strong> Brown for about 15 minutes, stirring occasionally. Add <strong>garlic,<\/strong> cook 1 minute. Add <strong>flour<\/strong> and cook 2 minutes.<\/p>\n<p>Add <strong>chicken broth, plate juices,<\/strong> \u00bc cup <strong>buttermilk<\/strong> and \u00bc cup <strong>water.<\/strong> Simmer for about 15-20 minutes, stirring occasionally.<\/p>\n<p>Adjust heat to low and add <strong>pork<\/strong> to pan with <strong>sauce.<\/strong> Simmer for 10 to 20 minutes, depending on the thickness of your <strong>meat.<\/strong> Baste the <strong>meat<\/strong> with the <strong>sauce<\/strong> occasionally.<\/p>\n<p><strong>Serve with:<\/strong><\/p>\n<table>\n<tbody>\n<tr>\n<td width=\"332\"><strong>Vegetable<\/strong><\/td>\n<td width=\"291\"><strong>Starch<\/strong><\/td>\n<\/tr>\n<tr>\n<td width=\"332\">Green Beans<\/td>\n<td width=\"291\">Noodles<\/td>\n<\/tr>\n<tr>\n<td width=\"332\">Broccoli<\/td>\n<td width=\"291\">German Potato Salad<\/td>\n<\/tr>\n<tr>\n<td width=\"332\">Asparagus<\/td>\n<td width=\"291\"><a href=\"http:\/\/nowellfamily.org\/cookbook\/2017\/10\/17\/spaetzle\/\">Spaetzle<\/a><\/td>\n<\/tr>\n<tr>\n<td width=\"332\">Green Salad<\/td>\n<td width=\"291\">French Fried Potatoes<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 2-3 Servings Scott Nowell Dec. 2017 Hmm pork chops.
