It was acquired by Macy\u2019s around 2001 which saw the demise of the in-store dining room. They were well known for these blueberry muffins.<\/p>\n<ul>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup sugar<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">large eggs<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups un-sifted flour<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp baking powder (HA: reduce to 1\u00bd tsp)<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">teaspoon salt<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup milk<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">tsp vanilla extract<\/span><\/li>\n<li><span class=\"quantity\">2\u00bd<\/span><span class=\"ingredient-name\">cups large fresh blueberries<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS demerara or pearl sugar (for top of muffins)<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nPreheat<\/strong> oven to 375\u00b0F.<\/p>\n<p>In a large mixing bowl, cream together <strong>butter<\/strong> and <strong>sugar<\/strong> until light and fluffy; add <strong>eggs,<\/strong> one at a time, beating after each addition.<\/p>\n<p>In a second bowl, add all <strong>dry ingredients<\/strong> and whisk to combine.<\/p>\n<p>Gradually add the <strong>dry ingredients<\/strong> to the <strong>creamed butter<\/strong> and <strong>sugar<\/strong> mixture along with the <strong>milk<\/strong> and <strong>vanilla.<\/strong><\/p>\n<p>Add the remaining <strong>whole berries<\/strong> and stir in gently by hand.<\/p>\n<p>Spray a 6 (large) or 12 (regular) muffin baking pan with Baker&#8217;s Joy (or other <strong>non-stick spray<\/strong>). These tend to stick, so paper muffin cut liners are highly recommended instead of <strong>spray.<\/strong>\u00a0 Fill muffin cups.<\/p>\n<p>Sprinkle <strong>sugar<\/strong> on top of unbaked muffins.<\/p>\n<p>Bake at 375\u00b0F for 25-30 minutes. Cool in pan. Run a knife around the edge of each <strong>muffin<\/strong> after several minutes to free it from the pan and cool on wire racks.<\/p>\n<p><strong>Additional Notes:<\/strong><\/p>\n<p>Yankee suggests using paper muffin liners when making these muffins, as the abundance of <strong>blueberries<\/strong> make them especially prone to sticking.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 12 Muffins Adapted from Yankee Magazine 2015: Jordan Marsh was a New England fixture for a long time.
