I do know this one is good. It is vegetable heavy compared to most and it is delicious. If you like a little added spice, put some hot pepper sauce on the table.&#8221;<\/p>\n<p>Prep: 15 Cook: 15 &#8211; 20<\/p>\n<ul>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup olive oil<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">onions, finely chopped<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">bell peppers, 1 red and 1 green seeded, ribs removed, and finely chopped<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">ribs celery, finely chopped<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">cloves garlic, minced<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups long-grain white rice<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">14-oz can diced tomatoes<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups water<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp black pepper<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">tsp cumin<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp thyme<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp parsley<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nSweat vegetables:<\/strong><\/p>\n<p>Heat the <strong>olive oil<\/strong> in a large frying pan over medium heat, then add the <strong>onions, green peppers, celery,<\/strong> season with <strong>salt<\/strong> &amp; <strong>pepper<\/strong> and saut\u00e9 until soft, about 3 to 5 minutes.<\/p>\n<p>Add the <strong>garlic<\/strong> and cook for another minute while stirring.<\/p>\n<p>Add the <strong>rice<\/strong> and stir together to mix.<\/p>\n<p>Add the <strong>cumin, thyme, parsley, salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p><strong>Add liquids: <\/strong><\/p>\n<p>Drain the <strong>tomatoes<\/strong> into a large measuring cup and add <strong>water<\/strong> to the <strong>tomato liquid<\/strong> to total 3 cups. Carefully add the drained <strong>diced tomatoes<\/strong> and the <strong>liquid<\/strong> to the <strong>rice<\/strong> mixture<\/p>\n<p><strong>Cook:<\/strong><\/p>\n<p>Bring to a boil, lower the heat, cover, and simmer for 15 to 20 minutes, until the <strong>rice<\/strong> is done, stirring once or twice.
