Later I searched it out on the internet and combined a couple of different recipes for a church pot luck. It has a fair number of ingredients, but goes together real quick. The recipe uses cooked chicken, but you could saut\u00e9 a chicken breast or two, if you don\u2019t have cooked on hand.<\/p>\n<ul>\n<li style=\"list-style-type: none;\"><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS olive oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">small onion &#8212; peel\/chop fine<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">medium garlic clove &#8212; peeled\/chopped<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp ground cumin<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">medium red bell pepper &#8212; chopped fine<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp chili powder<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">lb roasted, saut\u00e9ed or canned chicken breast &#8212; cut in 1\/2 in. cubes<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">14\u00bd oz cans of white beans, (cannelloni, navy, etc, undrained)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">14\u00bd oz can chicken broth or 2 cups homemade<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">4 oz can diced green chilies, mild, medium or <span style=\"color: #ff0000;\"><strong>hot<\/strong><\/span><\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS lime juice<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS cilantro &#8212; minced<\/span><\/li>\n<\/ul>\n<p><strong>Serving: (optional)<\/strong><\/p>\n<ul>\n<li><span class=\"id-ingredient-name\">salsa<\/span><\/li>\n<li><span class=\"id-ingredient-name\">sour cream<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Mexican Cheese Blend, shredded<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nSaut\u00e9:<\/strong><br \/>\nIn a large pot heat the <strong>olive oil<\/strong> over medium heat. Add the <strong>onion<\/strong>, and <strong>red bell pepper<\/strong>. Saut\u00e9 4-5 minutes. Add <strong>garlic<\/strong> and saut\u00e9 for 30 seconds.<\/p>\n<p><strong>Boil:<\/strong><br \/>\nStir the <strong>white beans<\/strong>, <strong>chilies, cumin,<\/strong> <strong>chili powder<\/strong> and <strong>broth.<\/strong> Bring to a boil, reduce the heat and simmer 10 minutes.<\/p>\n<p>Stir in the <strong>chicken<\/strong> and simmer 5 minutes.<\/p>\n<p>Stir in the <strong>lime juice<\/strong> and <strong>cilantro.<\/strong><\/p>\n<p><strong>Serve:<\/strong><br \/>\nA tablespoon of <strong>salsa,<\/strong> <strong>sour cream<\/strong> and\/or <strong>shredded cheese<\/strong> can be used to garnish each serving of <strong>chili,<\/strong> if desired.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 6 Servings Scott Nowell (more or less) Circa 2004: I think some variation of this recipe came from my daughter Samantha.
