And because it&#8217;s no flip, you don&#8217;t have to worry about your spatula &#8220;skills.&#8221; Use the 10 to 20 minutes when the pancake is in the oven to locate your maple syrup and butter and get plates onto the table.<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup AP flour<\/span><\/li>\n<li><span class=\"quantity\">\u2153<\/span><span class=\"ingredient-name\">cup cornmeal (not coarse, medium- or fine-grind works)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">large eggs<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup sugar<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS baking powder<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp baking soda<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp kosher salt<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">cups buttermilk, divided or \u00bc cup plus 1 TBS Saco buttermilk powder and 1\u00bd cups water, divided<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">TBS unsalted butter, melted, divided, plus more room temperature for serving<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup fresh blueberries<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS vegetable oil<\/span><\/li>\n<li><span class=\"id-ingredient-name\">pure maple syrup (for serving)<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nPreheat<\/strong> oven to 375\u00b0F.<\/p>\n<p><strong>Dry ingredients:<\/strong> Whisk 1 cup <strong>AP flour<\/strong> and \u2153 cup <strong>cornmeal<\/strong> in a small bowl. If using <strong>buttermilk powder<\/strong>, add \u00bc cup plus 1 TBS <strong>buttermilk powder,<\/strong> whisk.<\/p>\n<p><strong>Wet ingredients:<\/strong> Whisk 2 large <strong>eggs,<\/strong> \u00bc cup <strong>sugar,<\/strong> 1 TBS <strong>baking powder,<\/strong> 1 tsp <strong>salt,<\/strong> and \u00bd tsp <strong>baking soda<\/strong> in a medium or large bowl until <strong>eggs<\/strong> are lightened and smooth, about 30 seconds.<\/p>\n<p><strong>Mix ingredients:<\/strong> Add \u00be cup <strong>buttermilk<\/strong> (or <strong>water<\/strong> if using dry buttermilk) and half of the <strong>dry ingredients<\/strong> to the wet bowl and whisk very gently just to barely combine.<\/p>\n<p>Add remaining \u00be cup <strong>buttermilk<\/strong> (or water if using dry buttermilk), 2 TBS melted <strong>butter<\/strong> and remaining <strong>dry ingredients<\/strong> and whisk just to combine (some lumps are okay). Adding the <strong>dry ingredients<\/strong> in two batches, rather than all at once, lessens the risk of over-mixing (which would deflate and toughen the <strong>batter).<\/strong><\/p>\n<p>Using a wooden spoon, fold in 1 cup <strong>fresh blueberries.<\/strong><\/p>\n<p><strong>Cook in skillet:<\/strong> Heat 1 TBS <strong>vegetable oil<\/strong> and 2 TBS <strong>melted butter<\/strong> in a 10-inch or larger oven-safe nonstick skillet over medium. Using a combination of <strong>oil<\/strong> and <strong>butter<\/strong> raises the smoking point of the <strong>butter.<\/strong><\/p>\n<p>When foaming subsides, scrape in <strong>batter<\/strong> and use the back of a spoon to gently nudge it all the way to the edges.<\/p>\n<p>Reduce heat to medium-low and cook, shaking pan back and forth occasionally to ensure pancake will eventually slide out freely, until bubbles appear across surface of <strong>pancake,<\/strong> 4\u20136 minutes (it will still look quite wet and uncooked in the center, but you should see some browning around the outer edge).<\/p>\n<p><strong>Bake:<\/strong> Transfer pan to oven and cook until <strong>pancake<\/strong> is puffed and set, 10\u201315 minutes for a 10-inch skillet. Using a pot holder or oven mitt, shake the pan to make sure the center is set. Remove from oven and let cool for 5 minutes. Leave the mitt or holder draped over the handle to remind everyone it is very hot!<\/p>\n<p>Invert <strong>pancake<\/strong> onto a large plate or platter.
