Two warnings: Don\u2019t burn the pine nuts (been there, done that) and don\u2019t burn the couscous. If you don\u2019t know, couscous is pasta. Israeli or Pearl couscous is the size of BB\u2019s.<\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS butter, divided<\/span><\/li>\n<li><span class=\"quantity\">\u2153<\/span><span class=\"ingredient-name\">cup pine nuts (pignoli nuts), toasted<\/span><\/li>\n<li><span class=\"quantity\">\u2153<\/span><span class=\"ingredient-name\">cup finely chopped shallots<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">cups Israeli couscous, toasted<br \/>\n<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">large cinnamon stick<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">fresh or dried bay leaf<\/span><\/li>\n<li><span class=\"quantity\">14<\/span><span class=\"ingredient-name\">oz canned low-salt chicken broth<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup minced fresh Italian parsley<\/span><\/li>\n<li><span class=\"id-ingredient-name\">black pepper<\/span><\/li>\n<\/ul>\n<p>Toast the pine nuts. You can do this on a small tray in a toaster oven, or in a small saute pan. In either method, shake them a couple of times during cooking so they brown evenly. Watch them carefully and don\u2019t burn them. They go from a nice brown to burnt in an instant. If you burn them, discard and start over.<\/p>\n<p>Melt 2 tablespoons butter in a 2 quart sauce pan over medium heat. Add shallots and saut\u00e9 until golden, about 5 minutes.<\/p>\n<p>Add couscous, cinnamon stick, the bay leaf and stir until couscous browns slightly, stirring often, about 5 minutes. Pay careful attention as both the couscour and shallots will burn if you give them a chance.<\/p>\n<p>Add the broth and salt and bring to boil. Reduce heat to low; cover and simmer until couscous is tender and liquid is absorbed, about 10 minutes.<\/p>\n<p>Stir in parsley and pine nuts. Season with black pepper. Transfer to serving dish.<\/p>\n<h4 style=\"text-align: center\"><strong>Israeli Couscous<\/strong><\/h4>\n<h4 style=\"text-align: center\"><strong>with Asparagus, Peas, And Sugar Snaps<\/strong><\/h4>\n<h5 style=\"text-align: center\">Yield: 6 Servings<\/h5>\n<h6 style=\"text-align: center\">Jeanne Thiel Kelley \/ Bon Appetit<\/h6>\n<p>August 2016: Another variation with vegetables added.<\/p>\n<ul>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">TBS extra-virgin olive oil, divided<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS fresh lemon juice<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">large garlic cloves, minced, divided<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp finely grated lemon peel<\/span><\/li>\n<li><span class=\"quantity\">1\u2153<\/span><span class=\"ingredient-name\">cups Israeli couscous (6 to 7 oz)<\/span><\/li>\n<li><span class=\"quantity\">1\u00be<\/span><span class=\"ingredient-name\">cups (or more) vegetable broth<\/span><\/li>\n<li><span class=\"quantity\">14<\/span><span class=\"ingredient-name\">oz slender asparagus spears, trimmed, cut diagonally into \u00be-inch pieces (about 2 \u00bd cups)<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz sugar snap peas, trimmed, cut diagonally into \u00bd-inch pieces (about 2 \u00bd cups)<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup shelled fresh green peas or frozen, thawed<\/span><\/li>\n<li><span class=\"quantity\">\u2153<\/span><span class=\"ingredient-name\">cup chopped fresh chives<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup finely grated Parmesan cheese<\/span><\/li>\n<\/ul>\n<p>Whisk 2 tablespoons oil, lemon juice, 1 garlic clove, and lemon peel in small bowl; set dressing aside. Heat 1 tablespoon oil in heavy medium saucepan over medium heat. Add couscous, sprinkle with salt, and saut\u00e9 until most of couscous is golden brown, about 5 minutes. Add 1 3\/4 cups broth, increase heat, and bring to boil. Reduce heat to medium-low, cover, and simmer until liquid is absorbed and couscous is tender, about 10 minutes, adding more broth by tablespoonfuls if too dry.<\/p>\n<p>Meanwhile, heat remaining 1 tablespoon oil in heavy large nonstick skillet over high heat. Add asparagus, sugar snap peas, green peas, and remaining garlic clove. Sprinkle with salt and pepper; saut\u00e9 until crisp-tender, about 3 minutes. Transfer vegetables to large bowl.<\/p>\n<p>Add couscous to bowl with vegetables. Drizzle dressing over. Add chives and cheese; toss.
