{"id":75,"date":"2017-10-17T10:06:24","date_gmt":"2017-10-17T17:06:24","guid":{"rendered":"http:\/\/nowellfamily.org\/cookbook\/?p=75"},"modified":"2020-01-21T00:23:31","modified_gmt":"2020-01-21T00:23:31","slug":"english-muffin-loaf","status":"publish","type":"post","link":"https:\/\/nowellfamily.org\/cookbook\/2017\/10\/17\/english-muffin-loaf\/","title":{"rendered":"English Muffin Loaf"},"content":{"rendered":"<h5 style=\"text-align: center\">Yield: 8 Servings<\/h5>\n<h6 style=\"text-align: center\">Jonathan Wood\u2019s friend Gail<\/h6>\n<p style=\"text-align: left\">Summer 1994:&nbsp; In between technical stuff, Woody and I talk about food.&nbsp; He mentioned this great English Muffin Bread and gave me a copy of the recipe and about a pound of semolina out of a big sack that he bought.&nbsp; I don&#8217;t remember the ratio to all-purpose, but it tasted great.<\/p>\n<ul>\n<li><span class=\"quantity\">5<\/span><span class=\"ingredient-name\">cups flour <\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">packages of dry yeast<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS sugar <\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp soda <\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups milk<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup water cornmeal<\/span><\/li>\n<\/ul>\n<p>In a large bowl, mix together 3 cups flour, yeast, sugar, salt, and soda.<\/p>\n<p>Heat milk and water to 100\u00b0 \u2013115\u00b0 F. Add to dry ingredients and beat well.<\/p>\n<p>Stir in remaining two cups of flour to make a stiff, sticky batter.<\/p>\n<p>Spoon into two 8\u00bd\u201d x 4\u00bd\u201d loaf pans that have been greased and sprinkled with cornmeal.<\/p>\n<p>Sprinkle the tops of the loaves with cornmeal.<\/p>\n<p>Cover with a slightly damp cloth and let rise in a warm draft free place for 40 \u2013 45 minutes.<\/p>\n<p>Bake at 400\u00b0 F for 25 minutes.
