This appeared in the same issue of Bon Appetite as the <strong>Puff Pastry Pinwheel Cookies. Pear<\/strong> and <strong>Cranberry<\/strong> go very well together. The chopped <strong>Cranberries<\/strong> are mixed in a delicious <strong>custard.<\/strong>\u00a0 Baked on this tart crust they make a delicious holiday season dessert.<\/p>\n<p><strong>Crust:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup plus 2 TBS all-purpose flour <\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup (1 stick) plus 1 TBS chilled unsalted butter, diced <\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">TBS powdered sugar <\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">tsp salt <\/span><\/li>\n<li><span class=\"quantity\">2-3<\/span><span class=\"ingredient-name\">TBS ice water<\/span><\/li>\n<\/ul>\n<p><strong>Filling:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">TBS ( stick) unsalted butter <\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">large Bosc pears (about 1\u00bc to 1\u00bd lb), peeled, quartered lengthwise, cored <\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">TBS sugar <\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">large eggs <\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS all-purpose flour <\/span><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">cup fresh cranberries (about 3 oz) <\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">TBS pear brandy, apple brandy (Calvados), brandy <\/span><\/li>\n<li><span class=\"id-ingredient-name\">additional cranberries <\/span><\/li>\n<li><span class=\"id-ingredient-name\">sweetened whipped cream<\/span><\/li>\n<\/ul>\n<p><strong>Special Equipment:<\/strong><\/p>\n<ul>\n<li><span class=\"id-ingredient-name\">11-inch removable bottom tart pan<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nTo make crust:<\/strong><\/p>\n<p>Preheat oven to 375\u00b0F. Combine all <strong>crust ingredients<\/strong> in processor. Using on\/off turns, blend until moist clumps form. Gather <strong>dough<\/strong> into ball. Press <strong>dough<\/strong> evenly over bottom and up sides of 11-inch-diameter tart pan with removable bottom. Freeze until firm, about 15 minutes.<\/p>\n<p>Dock (pierce) <strong>crust<\/strong> all over with fork to prevent bubbles.<\/p>\n<p>Bake <strong>crust<\/strong> until golden brown, piercing with toothpick if crust bubbles, about 25 minutes. Transfer to rack and cool. Maintain oven temperature.<\/p>\n<p><strong>To make filling:<\/strong><\/p>\n<p>Melt 2 TBS <strong>butter<\/strong> in heavy large skillet over medium heat. Add <strong>pears.<\/strong> Sprinkle 2 TBS <strong>sugar<\/strong> over <strong>pears.<\/strong> Saut\u00e9 until <strong>pears<\/strong> begin to brown and soften slightly, turning occasionally, about 12 minutes. Cool <strong>pears.<\/strong> Place <strong>pears,<\/strong> rounded sides up, on work surface (do not clean skillet). Cut <strong>pears<\/strong> into thin crosswise <strong>slices;<\/strong> press gently to fan <strong>slices<\/strong> of each quarter.\u00a0 Fan backwards towards the wide end.\u00a0 Using a knife blade, transfer <strong>pear quarters<\/strong> to crust, pointed ends toward center.<\/p>\n<p>Melt remaining 4 TBS <strong>butter<\/strong> in same skillet over lowheat, whisking to incorporate <strong>pear juices<\/strong> left in skillet. Whisk 4 TBS <strong>sugar, eggs<\/strong> and <strong>flour<\/strong> in large bowl to blend. Gradually whisk in <strong>butter mixture<\/strong> from skillet. Combine \u00be cup <strong>cranberries<\/strong> and remaining 2 TBS <strong>sugar<\/strong> in processor and coarsely chop <strong>cranberries.<\/strong> Stir <strong>cranberry<\/strong> mixture and <strong>pear<\/strong> brandy into <strong>egg mixture<\/strong> .<\/p>\n<p>Spoon <strong>cranberry custard mixture<\/strong> between <strong>pears<\/strong> and into center of <strong>crust.<\/strong><\/p>\n<p><strong>Bake:<\/strong><\/p>\n<p>Bake <strong>tart<\/strong> until filling is set and top begins to brown, about 50 minutes. Cool <strong>tart<\/strong> on rack. (Can be made 8 hours ahead. Let stand at room temperature.)<\/p>\n<p>Using small sharp knife, cut <strong>crust<\/strong> away from pan sides if necessary. Gently push up pan bottom to release <strong>tart.<\/strong> Place <strong>tart<\/strong> on platter.
