It&#8217;s rich, creamy, and deeply flavorful, a perfect hearty meal on a cold day.<br \/>\nPrep: 10 Cook: 45<\/p>\n<ul>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">TBS unsalted butter<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">medium onion, finely diced, about 6 oz<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">large rib celery, finely diced, about 4 oz<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz ham, diced\/cubed<br \/>\n<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">medium cloves garlic, minced<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">lb dried green split peas<\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">cups low-sodium chicken stock, or water<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">bay leaves<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Kosher salt and freshly ground black pepper<\/span><\/li>\n<\/ul>\n<p>Set Instant Pot to <strong>HIGH SAUT\u00c9<\/strong>. Add <strong>butter<\/strong> and wait until foaming stops. Add <strong>onion, celery,<\/strong> and <strong>ham<\/strong> and cook, stirring, until softened but not browned, about 3 minutes. Add <strong>garlic<\/strong> and cook until aromatic, about 30 seconds.<\/p>\n<p>Add <strong>peas, chicken stock<\/strong> or <strong>water,<\/strong> and <strong>bay leaves.<\/strong> Stir to combine, then close the lid. Set the Instant Pot to <strong>MANUAL<\/strong> <strong>HIGH<\/strong> pressure for 20 minutes, then rapidly release pressure by opening the air valve. Open pot lid, stir contents until smooth, season to taste with <strong>salt<\/strong> and <strong>pepper,<\/strong> and serve. Soup can be stored in the refrigerator for up to 1 week.<\/p>\n<p><strong>Note:<\/strong>\u00a0<strong>Split peas<\/strong> are particularly prone to clogging valves and foaming, so do not attempt to double this recipe.\u00a0 After cooking, make sure to immediately clean the gasket and valves on the lid as soon as the pot is cool enough to handle, since <strong>pea soup<\/strong> can clog the valves and harden if not properly cleaned.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yield: 6 to 8 Servings (Do not double!)
