Use canned artichoke hearts; they&#8217;ve got a tangier flavor and better texture than the frozen ones. If you want to go a step further, transfer it to a skillet and run it under the broiler after cooking, which gives you bubbling dip with a golden top.<\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">10-oz package frozen spinach, defrosted, drained and chopped as desired<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS olive oil<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">large garlic clove, finely chopped<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Pinch <strong><span style=\"color: #ff0000;\">crushed red pepper flakes<\/span> <\/strong>(optional)<\/span><\/li>\n<li><span class=\"id-ingredient-name\">Kosher salt and black pepper<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">(14-oz) can quartered artichoke hearts, drained and coarsely chopped<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz cream cheese, cut into 1-inch pieces<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">oz fresh mozzarella, torn or shredded<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">oz sour cream or full-fat Greek yogurt<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup pecorino Romano or Parmesan cheese, finely grated<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nDefrost<\/strong>, drain <strong>spinach.<\/strong> Wring out well in paper towels or dish towel. Chop, if desired.<\/p>\n<p>Heat <strong>olive oil<\/strong> in a medium pot over medium heat. Add <strong>garlic<\/strong> and cook, stirring until it\u2019s softened and fragrant, about 30 seconds.<\/p>\n<p>Add <strong><span style=\"color: #ff0000;\">crushed red pepper<\/span><\/strong>, if using. Add <strong>artichokes<\/strong> and season with <strong>salt<\/strong> and pe<strong>p<\/strong>per. Cook for a few minutes, just to take the raw edge off the <strong>artichokes.<\/strong><\/p>\n<p>Reduce heat to low and add <strong>cream cheese<\/strong> and <strong>mozzarella.<\/strong> Using a wooden spoon or spatula, stir until all the <strong>cheese<\/strong> has melted, about 3 minutes. Stir in <strong>sour cream<\/strong> and <strong>pecorino\/parmesan,<\/strong> and season with more <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>You can certainly eat this <strong>dip<\/strong> straight from the pot (or transferred to a serving bowl), but running it under the broiler for a crispy top is also an excellent option. To do so, transfer <strong>dip<\/strong> to a small ovenproof skillet (6 to 8 inches). Place in oven and broil until the top is golden and the <strong>dip<\/strong> is bubbling, 5 to 8 minutes.
