It needed a lot of fixing. We\u2019ve been making it for many years and like it for its simplicity. Unlike a lot of Chicken Parm recipes, this is baked in the sauce rather than coated just before serving. The sauce for this is very simple and uses inexpensive canned sauce. You can certainly substitute your favorite sauce, but it will likely be a different dish.\u00a0 That&#8217;s a double batch in the photo above.<\/p>\n<ul>\n<li><strong><span class=\"&quot;sect-ingredient-name\">Chicken:<\/span><\/strong><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">boneless skinless chicken breasts<\/span><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">cup grated parmesan cheese<\/span><\/li>\n<li><span class=\"quantity\">\u00be<\/span><span class=\"ingredient-name\">cup plain bread crumbs<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">egg beaten with 2 TBS milk<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup flour seasoned with salt and pepper.<\/span><\/li>\n<li><span class=\"id-ingredient-name\">vegetable oil<\/span><\/li>\n<li><span class=\"quantity\">1-2<\/span><span class=\"ingredient-name\">TBS butter<\/span><\/li>\n<li><strong><span class=\"&quot;sect-ingredient-name\">Sauce:<\/span><\/strong><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">medium onion, chopped<\/span><\/li>\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">8 oz cans tomato sauce<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp oregano<\/span><\/li>\n<li><span class=\"quantity\">1\/8<\/span><span class=\"ingredient-name\">tsp freshly ground black pepper<\/span><\/li>\n<li><strong><span class=\"&quot;sect-ingredient-name\">Assembly:<\/span><\/strong><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz grated mozzarella cheese<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup grated Parmesan cheese<\/span><\/li>\n<\/ul>\n<p>Trim and halve the <strong>chicken breasts<\/strong> to form equal sized pieces. You can pound the <strong>chicken<\/strong> to get a uniform thickness, but I usually don\u2019t do that. They come out fine as-is. Season with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Set up a coating station in 3 dishes or 1 dish or plastic bag for the <strong>egg<\/strong> and 2 for the dry mixes. Put <strong>flour,<\/strong> seasoned with <strong>salt<\/strong> and <strong>pepper<\/strong> in the first. Beat the <strong>egg<\/strong> and <strong>milk<\/strong> in the second and season with <strong>salt<\/strong> and <strong>pepper.<\/strong> Mix the grated <strong>Parmesan cheese<\/strong> with the <strong>bread crumbs<\/strong> in the third.<\/p>\n<p>Dredge the <strong>chicken breasts<\/strong> in <strong>flour,<\/strong> shaking off excess. Dip in <strong>egg mixture<\/strong> to coat, then press into <strong>cheese<\/strong> and <strong>crumb<\/strong> mixture. Turn to coat on all sides. Set aside and repeat with the remaining <strong>breasts.<\/strong><\/p>\n<p>Heat a pan until hot, add 1 TBS each of <strong>butter<\/strong> and <strong>oil.<\/strong> Heat until <strong>butter<\/strong> stops foaming. Brown <strong>chicken<\/strong> in batches on one side, turn and brown other side. Arrange <strong>chicken<\/strong> in 9 x 13 inch baking dish.<\/p>\n<p><strong>Sauce:<\/strong> Discard used <strong>oil<\/strong> and wipe out the pan so remaining <strong>crumbs<\/strong> don\u2019t burn. Add 1 TBS <strong>oil<\/strong> and heat over medium heat. Add the <strong>chopped onion<\/strong> and saut\u00e9 for about 5 minutes, until translucent but not browned. Add the <strong>tomato sauce<\/strong> and <strong>oregano.<\/strong> Stir and heat until boiling.<\/p>\n<p>While the <strong>sauce<\/strong> is heating, divide the <strong>Mozzarella<\/strong> and place on top of the <strong>chicken breasts.<\/strong> When <strong>sauce<\/strong> is hot, carefully pour over the <strong>chicken breasts.<\/strong> Top each <strong>breast<\/strong> with equal amounts of the remaining <strong>Parmesan cheese.<\/strong><\/p>\n<p><strong>Bake:<\/strong><\/p>\n<p>In 375\u00b0F oven for 20 to 30 minutes or until the <strong>sauce<\/strong> is bubbling in the center of the pan and the <strong>chicken<\/strong> is 165\u00b0F in the thickest part.<\/p>\n<p><strong>-or-<\/strong><\/p>\n<p>In 300\u00b0F oven. Cover dish with foil and bake approximately 1 hour.
