Nope, lobster once, shrimp twice, lobster, shrimp and scallops once. This is wonderful stuff! Very simple to make, the recipe was featured on the cover of Food and Wine around 1987. Not a perfect substitute, but I converted this to use shrimp and scallops, and it is still great.\u00a0 See photos.<\/p>\r\n<ul>\r\n<li><span class=\"quantity\">4<\/span><span class=\"ingredient-name\">live lobsters, 1\u00bd lb each <\/span><\/li>\r\n<li><span class=\"id-ingredient-name\"><strong>&#8211; or &#8211;<\/strong><\/span><\/li>\r\n<li><span class=\"quantity\">1\u00bd-2<\/span><span class=\"ingredient-name\">lb shrimp\u00a0<\/span><\/li>\r\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">large sea scallops, foot removed\u00a0<\/span><\/li>\r\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">cold-water lobster tails <\/span><\/li>\r\n<\/ul>\r\n<ul>\r\n<li><span class=\"quantity\">1\u00bd-2<\/span><span class=\"ingredient-name\">lb red potatoes, peeled and cut into \u00bc inch dice <\/span><\/li>\r\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">cup heavy cream <\/span><\/li>\r\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp salt <\/span><\/li>\r\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">TBS unsalted butter <\/span><\/li>\r\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">medium red onion, thinly sliced <\/span><\/li>\r\n<li><span class=\"id-ingredient-name\">minced fresh chives<\/span><\/li>\r\n<li><span class=\"id-ingredient-name\">cayenne pepper<\/span><\/li>\r\n<\/ul>\r\n<p><strong>Lobster version:\u00a0<\/strong><\/p>\r\n<p>Bring a large stock pot of <strong>water<\/strong> to a boil. Fill a large bowl with <strong>ice water<\/strong> and set aside. Drop 2 <strong>lobsters<\/strong> head first into the <strong>boiling water,<\/strong> cover and cook for 3 minutes. With tongs, transfer the <strong>lobsters<\/strong> to the <strong>ice water<\/strong> and let soak until cool enough to handle. Repeat with the remaining 2 <strong>lobsters.<\/strong><\/p>\r\n<p>Break off the <strong>tail<\/strong> and <strong>claws<\/strong> from each <strong>lobster.<\/strong> Remove the <strong>meat<\/strong> from the <strong>claws<\/strong> and <strong>knuckles.<\/strong> Split the <strong>tails<\/strong> lengthwise in half, leaving the <strong>meat<\/strong> in the shell. Remove the <strong>light green tomalley<\/strong> from the body, pass through a fine-mesh sieve and set aside.<\/p>\r\n<p>Remove and discard any <strong>dark green matter<\/strong> from the bodies. Coarsely chop the carcasses and place in a large saucepan. Add <strong>water<\/strong> to cover. Bring to a boil over high heat, reduce the heat and simmer until the liquid is reduced to 1 cup, about 30 minutes. Strain the liquid through a fine-mesh sieve into a medium saucepan, then set the <strong>lobster stock<\/strong> aside.<\/p>\r\n<p><strong>Shrimp version: <\/strong><\/p>\r\n<p>Peel and devein the <strong>shrimp,<\/strong> reserving the <strong>shells<\/strong> and <strong>tails.<\/strong> Place the <strong>shells<\/strong> and <strong>tails<\/strong> in a saucepan and add two cups of <strong>water.<\/strong> Bring to a boil over high heat, reduce the heat and simmer until the liquid is reduced to 1 cup, about 30 minutes. Strain the liquid through a fine-mesh sieve into a medium saucepan, then set the <strong>shrimp stock<\/strong> aside.<\/p>\r\n<p><strong>Lobster tail, shrimp, scallop combo version: <\/strong><\/p>\r\n<p>Bring enough water to cover the <strong>lobster tails<\/strong> to boil. Add the <strong>lobster tails<\/strong> and cook for 90 seconds to 2 minutes. Remove to a bowl of <strong>ice water<\/strong> to stop cooking. When <strong>lobster tails<\/strong> are cool, remove from the <strong>shells<\/strong> and cut into bite sized pieces.<\/p>\r\n<p>Add the <strong>shrimp shells<\/strong> and <strong>lobster tail shells<\/strong> to the saucepan and return water to a boil over high heat, reduce the heat and simmer until the liquid is reduced to 1 cup. Strain the liquid through a fine-mesh sieve into a medium saucepan, then set the <strong>seafood stock<\/strong> aside. Discard the <strong>shells.<\/strong><\/p>\r\n<p><strong>All: <\/strong><\/p>\r\n<p>Return the <strong>stock<\/strong> to the pan and add <strong>cream<\/strong> and <strong>salt<\/strong> to the reserved <strong>lobster<\/strong> or <strong>shrimp stock.<\/strong> Simmer over moderate heat for 5 minutes. Whisk in 4 TBS of the <strong>butter,<\/strong> 1 TBS at a time. Remove from the heat.<\/p>\r\n<p><strong>Potatoes: <\/strong><\/p>\r\n<p>Meanwhile, place the <strong>diced potatoes<\/strong> in a medium saucepan and add <strong>cold water<\/strong> to cover by at least 1 inch. Bring to a boil over high heat and cook for about 3 minutes, the <strong>potatoes<\/strong> should still be very firm. Drain and rinse under cold water, drain well and set aside.<\/p>\r\n<p>In a large skillet or saucepan, melt the remaining 2 TBS <strong>butter<\/strong> over moderate heat. Add the <strong>onion<\/strong> and cook until softened and translucent, for about 2 minutes.<\/p>\r\n<p>Add the <strong>potatoes<\/strong> and cook, tossing, for 1 minute.<\/p>\r\n<p><strong>Finish sauce and serve:<\/strong><\/p>\r\n<p>Pour in the <strong>cream sauce<\/strong> and add the reserved <strong>seafood.<\/strong> Simmer until the <strong>seafood<\/strong> is cooked through, for about 3 minutes, do not overcook.<\/p>\r\n<p>Spoon the <strong>chowder<\/strong> into individual soup plates. If using, add a spoonful of the sieved <strong>tomalley<\/strong> to the <strong>sauce<\/strong> in each bowl.
