The meat just slides off the bone!<\/p>\n<p><strong>Saut\u00e9:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS extra-virgin olive oil divided<\/span><\/li>\n<li><span class=\"quantity\">4-6<\/span><span class=\"ingredient-name\">lamb shanks trimmed of excess fat<\/span><\/li>\n<\/ul>\n<p><strong>Pressure:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">large white onion diced<\/span><\/li>\n<li><span class=\"quantity\">6<\/span><span class=\"ingredient-name\">cloves garlic minced<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">large carrots sliced \u00bd-inch thick<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">pinch coarse salt and freshly ground pepper<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup flour<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">cups beef stock<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">cups red wine like Merlot, Pinot Noir, or a Chianti<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">14oz can tomato sauce<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS tomato paste<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">large tsp better than bouillon<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp fresh rosemary finely chopped<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS fresh parsley finely chopped (divided)<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">bay leaves<\/span><\/li>\n<\/ul>\n<p><strong>Gremolata:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS chopped fresh mint<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS (packed) finely grated lemon peel<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">TBS minced fresh green garlic or 1 garlic clove, minced<\/span><\/li>\n<\/ul>\n<p><strong>Vegetables:<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz slender baby carrots, trimmed, peeled<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz sugar snap peas, strings removed<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">TBS (\u00bc stick) butter<\/span><\/li>\n<li><span class=\"quantity\">3<\/span><span class=\"ingredient-name\">oz fresh pea tendrils<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nSaut\u00e9:<\/strong><\/p>\n<p>Set a 6-qt Instant Pot to the <strong>SAUT\u00c9 HIGH<\/strong> setting. Add oil and heat until shimmering.<\/p>\n<p>Wash and pat dry <strong>lamb shanks<\/strong> with paper towel. Season <strong>shanks<\/strong> with <strong>salt<\/strong> and <strong>pepper.<\/strong><\/p>\n<p>Sear two <strong>shanks<\/strong> in the hot <strong>oil<\/strong> until browned on all sides. Repeat with remaining <strong>shanks<\/strong> and oil.<\/p>\n<p><strong>Pressure cook:<\/strong><\/p>\n<p>Add all <strong>shanks<\/strong> to the pot. Sprinkle with <strong>flour,<\/strong> toss well and cook on <strong>SAUT\u00c9<\/strong> for a further 4-5 minutes to brown. Press KEEP <strong>WARM\/CANCEL<\/strong> to stop the <strong>SAUT\u00c9<\/strong> function.<\/p>\n<p>Add in the <strong>onions, carrots, wine, stock, tomato puree, tomato paste, garlic, bullion<\/strong>\u00a0and <strong>herbs. <\/strong>Stir well, cover and seal Instant Pot and set to <strong>MANUAL HIGH<\/strong> pressure for 30 minutes.<\/p>\n<p>After cooking, allow the pressure to release naturally for 8-10 minutes. Turn the valve from sealing to venting to release the pressure.<\/p>\n<p><strong>Thicken sauce:<\/strong><\/p>\n<p>Change the Instant Pot setting back to the <strong>SAUT\u00c9<\/strong> setting stir well and allow the <strong>sauce<\/strong> to thicken uncovered, for a further 5-10 minutes.<\/p>\n<p>Garnish with <strong>parsley<\/strong> and serve with <strong>mashed potatoes, polenta, rice<\/strong> or <strong>noodles.<\/strong><\/p>\n<p><strong>For gremolata: <\/strong><\/p>\n<p>Mix all <strong>ingredients<\/strong> in small bowl.<\/p>\n<p><strong>Do ahead:<\/strong> Can be made 2 hours ahead. Cover and chill.<\/p>\n<p><strong>For vegetables: <\/strong>Bring large pot of <strong>salted water<\/strong> to boil. Add <strong>carrots;<\/strong> cook until tender, about 5 minutes. Using slotted spoon, transfer <strong>carrots<\/strong> to bowl with <strong>potatoes.<\/strong> Add <strong>sugar snap peas<\/strong> to same pot; cook 1 minute. Drain. Add to bowl with <strong>carrots.<\/strong><\/p>\n<p><strong> Do ahead:<\/strong> Can be made 2 hours ahead.
