The toughest bit is having the mini-muffin tins.<\/p>\n<ul>\n<li><span class=\"id-ingredient-name\">olive oil <\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">16-oz package wonton skins<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">lb shrimp, cooked, peeled, and coarsely chopped<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">yellow bell pepper, roasted, peeled, and chopped<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">red bell pepper, roasted, peeled, and chopped<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup chopped fresh cilantro<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">chipotle pepper in adobo sauce, drained and finely chopped<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz fontina cheese, shredded<\/span><\/li>\n<li><span class=\"id-ingredient-name\"><strong>Special Equipment:<\/strong> mini-muffin tin<\/span><\/li>\n<\/ul>\n<p><strong><br \/>\nSkins<\/strong> and <strong>filling<\/strong> may be prepared in advance and assembled just before baking.<\/p>\n<p>Preheat oven to 350\u00b0F.<\/p>\n<p>Brush mini-muffin cups with <strong>olive oil.<\/strong> Press 1 <strong>wonton skin<\/strong> into each cup. Bake about 10 minutes until tops are golden brown. Remove from oven and cool slightly.<\/p>\n<p>In large bowl, combine <strong>shrimp, roasted bell peppers, cilantro,<\/strong> <span style=\"color: #ff0000;\"><strong>chipotle pepper<\/strong><\/span>, and <strong>cheese.<\/strong> Remove cooled <strong>skins<\/strong> from muffin pan and place on baking sheet.
