Chunks of chicken breast are drenched in lemon, garlic, oregano, and olive oil before being skewered with loads of colorful vegetables. Everything comes off the grill tender, juicy, and insanely delicious.<\/p>\n<p><strong>Note:<\/strong> So easy to over cook chicken this way. Simplify and skip the grill and saut\u00e9 in a pan.<\/p>\n<p><strong>Marinade<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">cup olive oil<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup red wine vinegar<\/span><\/li>\n<li><span class=\"quantity\">\u00bc<\/span><span class=\"ingredient-name\">cup lemon juice<\/span><\/li>\n<li><span class=\"quantity\">2<\/span><span class=\"ingredient-name\">tsp Dijon mustard<\/span><\/li>\n<li><span class=\"quantity\">3-4<\/span><span class=\"ingredient-name\">garlic cloves, minced<\/span><\/li>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">tsp dried oregano<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">tsp salt<\/span><\/li>\n<li><span class=\"quantity\">\u00bd<\/span><span class=\"ingredient-name\">tsp black pepper<\/span><\/li>\n<\/ul>\n<p><strong>Chicken kabobs<\/strong><\/p>\n<ul>\n<li><span class=\"quantity\">1\u00bd<\/span><span class=\"ingredient-name\">lb boneless skinless chicken breasts, about 3 large chicken breasts, cut into 1\u00bd-inch pieces.<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">red bell pepper, seeded, cut into 1\u00bd-Inch pieces<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">yellow bell pepper, seeded, cut into 1\u00bd-inch pieces<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">red onion, cut into 1 \u00bd-inch chunks<\/span><\/li>\n<li><span class=\"quantity\">1<\/span><span class=\"ingredient-name\">zucchini, sliced<\/span><\/li>\n<li><span class=\"quantity\">8<\/span><span class=\"ingredient-name\">oz mushrooms, cut into 1\u00bd-Inch pieces<\/span><\/li>\n<\/ul>\n<p><strong>To make the marinade:<\/strong> whisk together the <strong>olive oil<\/strong>, <strong>red wine vinegar<\/strong>, <strong>lemon juice<\/strong>, <strong>Dijon mustard<\/strong>, <strong>minced garlic<\/strong>, <strong>dried oregano, salt,<\/strong> and <strong>pepper.<\/strong><br \/>\n<strong>Note:<\/strong> Reserve half of the <strong>marinade<\/strong> for finishing kabobs.<\/p>\n<p><strong>Marinate chicken:<\/strong><\/p>\n<p>Place <strong>chicken<\/strong> pieces in a freezer bag and pour the <strong>marinade<\/strong> over the <strong>chicken.<\/strong> Cover and marinate in the fridge for at least one hour.<\/p>\n<p><strong>Grill option:<\/strong><\/p>\n<p>Heat grill to medium-high heat. Thread the skewers with pieces of <strong>red onion, chicken, zucchini, mushroom<\/strong> and <strong>bell pepper.<\/strong> You can alternate the order.<\/p>\n<p>Place the <strong>kabobs<\/strong> on the preheated grill and cook for 5-7 minutes per side. The <strong>kabobs<\/strong> are done when the <strong>chicken<\/strong> is cooked through and the vegetables are lightly charred, about 15 minutes. When done, brush with the remaining <strong>marinade<\/strong> or move the kabobs to a platter and then brush.<\/p>\n<p><strong>Saut\u00e9 option:<\/strong><\/p>\n<p>Heat a large skillet or cast iron pan over medium high heat.<\/p>\n<p>Add 2 TBS <strong>oil<\/strong> to pan then saut\u00e9 <strong>chicken<\/strong> until almost cooked through. Remove <strong>chicken<\/strong> to bowl.<\/p>\n<p>Saut\u00e9 <strong>vegetables<\/strong> until they reach the desired doneness. Return <strong>chicken<\/strong> to pan.
